Was disappointed to see no food photos in Yuki's Singapore dump, so I'm taking things into my own hands. Have a short and messy drabble instead
'Are you free tonight?' went a random text that Liam suddenly got on his phone one afternoon, wondering what's that all about.
'Yeah Yuki, what's up?'
'I wanna go street food hunting.'
Street food hunting? Liam thought to himself, sounding a bit like a dinner date.
'You sure John is fine with it?'
'John's said it's fine, it'll help me bulk up.'
Liam was relieved hearing that answer from Yuki, following up his previous text with another one.
'I heard there's great street food place called Lau Pa Sat. It's got various hawker stalls that sells many types of Singaporean seafood. You wanna come?'
Liam took a minute to give it think about. It's good that he and Yuki can have a bit of time to themselves, it wouldn't hurt to go find Singaporean street food once.
'Yeah, sure thing Yukes, I'm in.'
'Can't wait to see you tonight 😁'
'You see me every week already!'
Liam giggled to himself after sending the message, shaking his head as he plugs his phone in to charge and get ready.
~~~
Liam exits the elevator and walks into the lobby, where Yuki was already waiting.
'Hey Yuki!'
'You're a little late.' Yuki crossed his arms and tapped his foot, staring daggers into Liam's eyes.
'Yeah, I know, sorry, mate.'
'It's fine. Come, let's go.'
So the duo walked out of the hotel and headed across the street, entering the mall and
'How far is it?'
'It's only a 12-minute trip with public transport from here if Google Maps is accurate. Got your MRT card?'
'I got mine, but won't we be recognised in public?'
'Eh, to hell with it. Come, let's go before it gets too crowded.'
Yuki and Liam enter the mall in Marina Bay Sands, heading down the escalators and into the Bayfront MRT Station, passing through the gate, and approaching the platform.
~~~
Yuki and Liam walked out of the MRT station and towards the street, looking at the street signs, trying to find their way.
'You sure we're going the right way, Yukes?'
'Yes we are, we're following Google Maps.'
They kept on walking, following the GPS on Yuki's phone, until they encountered a large open space with a clock tower standing proudly in the middle of it.
'So this is the place... Interesting...' Liam nodded as he looked around in the interior.'
"Yeah, it says here on the website that it used to be an old fish market back in 1824.'
'Well, nothing fishy about it, I'd say.' Liam laughed at his joke, making Yuki smile as well.
'What do you wanna get, Liam?'
'Hmm, I dunno. Maybe something we could share?'
Yuki looked around the premises and saw a satay stall in the corner, immediately making up his mind
'Liam, I'm gonna go get us satay. Go find us a seat.'
Liam nodded his head and looked around, finding a vacant table nearby. He looked around and took notice of the hustle and bustle of the food court, seeing locals and tourists enjoying the various foods sold.
'Ok, I've ordered us satay and this oyster omelette called o-chien.'
'Oh thanks, Yuki. I'm gonna get us drinks. What do you want?'
'Coconut water would be nice.'
'Alright, I'll get us both coconut water. Stay right there.'
While Liam goes up to the drinks stall, Yuki looks at his surroundings, seeing the different people enjoying their food, making him dream about his future restaurant one day. Just as he gets deep into his daydream, the little pagers vibrated and beeped, telling him that their food was ready. He got up from his table and went to pick the food from their respected vendors.
Luckily for him, Liam went back to their table on time with their coconut water in tow. Yuki picked up the trays of food on each hand and brought it back to their table.
'Oh, that looks yum!' piped Liam sering Yuki with the trays, helping him placed them on the table.
'Thanks, Liam.' Yuki sat down and took a sip of the coconut water, feeling refreshed. 'Ah, nice and cold.'
'Right, let's dig in!' Liam piped up as he picked up a skewer and dipped it into the peanut sauce.
Yuki followed suit, took a bite of the satay, and enjoyed its smoky taste.
'Man, this hits the spot.'
'Liam, try the o-chien. I bet you'll like it.'
Liam picked up the chopsticks and tore a piece of the omelette from it. He dipped it in the chili sauce and took a bite.
'Hmm, it's very savoury and the chili sauce enhances the flavour.'
'Wow, using culinary words now, are we?'
'Picked that all up from you, mate.'
Liam stared at Yuki, who was happily enjoying the glutinous rice cakes immersed in the peanut sauce. He's still the huge foodie he first had feelings for many years ago in their flat, trapped at home due to the pandemic. Yuki's wide smile while being around food never fails to make Liam smile.
Suddenly, he had a cheeky idea.
'Yuki, Yuki, open your mouth.'
'Why?'
'Just trust me.'
'Well, alright then...'
Liam picked up a piece of the omelette, dipping it in chilli sauce, and fed it to Yuki.
'You're feeding me like I'm your girlfriend!'
'You could be mine, if you'd like.'
They both laughed it off together as they enjoyed their food, just the two of them. Yuki took a look at his phone, seeing that the clock is ticking and the night is further approaching.
'We better get back before it's late. Come, let's go.'
Liam and Yuki immediately finished their food and drinks, tidying up their trays, and placing them in their respected clean up spots.
They walked out of the food court and crossing the street, going down the road back to the MRT station.
~~~
'That was fun...' Liam commented as they walked through the hotel hallway, approaching their rooms.
'Yeah, it was. Thanks for being willing to join me.'
'It's no problem at all, Yukes.'
They both stood awkwardly in front of their rooms' doors, darting their eyes around before Liam broke the silence.
'Do you think we could do this again? I mean in Texas, of course.'
'Oh definitely, Liam. I've always got a list of Texas barbeque foods I wanna try! Anyway, we better head inside. Good night, Liam.'
'Good night, Yuki.'
'And Liam...'
'Yeah?'
'When you said I could be yours, did you mean it?'
'Y-Yeah... I did...'
Both Yuki and Liam's cheeks turned a bright red after the confession, them shyly looking at each other.
'Would you wanna be mine, Yuki?'
Yuki held Liam's hand ever so lightly and leaned towards him, gently kissing his lips, chuckling seeing Liam's shocked face.
'Maybe I will...' Yuki took out his keycard from his trousers' pocket. 'See you in the morning, Flash.'
'You too, Yukes.'
Farmers Market
Content: It's literally you and Levi at an outdoor market. Enjoy!
"Levi, look here!" You call to him from another stall.
It was your favorite time of year, fall, when the weather cooled down. The outdoor markets were starting back up and it was opening day at your favorite one.
"Look at the size of the peppers, only a dollar!" Somehow produce sales just got you excited.
"They look alright." He says, wondering why they're so cheap.
"We got a good crop right on time this year." The vendor says.
"Let's get some." You say, ready to pull some cash out.
"Gonna go any cheaper?" Levi asks the man behind the table.
"Levi! How much cheaper can they be?" You're a bit embarrassed that he's starting in already. But Levi knows that if it were near the end of the day and there's too much left they always give a better deal.
The vendor laughs though. "Maybe. You know what? You were such good customers last season, if you want to buy in bulk, how about half off? Anything you want today." There really was a lot and he remembered how much you always picked up.
"See?" Levi tells you, kissing your temple, looking at what else there is.
You were convinced Levi could talk anyone into anything, and were happy to use it to your advantage.
Soon your rolling fold up cart is already half full with bell peppers, cucumber, cauliflower, bags of kale and a huge butternut squash that Levi was sure you'd make him cut into, even though he showed you how last time.
He handed the vendor the cash as you thanked him and were already off to another stall. It really was a good deal, not that you needed ten peppers.
You were already haggling over dried fruit and nuts, coming away with eight bags for a decent percentage off, stuffing them in the tote you had.
"I got you hazelnuts and beets." You say, seeing a small smile from Levi. When you weren't looking he rolled his eyes a bit, knowing the vendors must love seeing you coming. But you always made sure to throw in his favorites, and since you didn't come as often as you would like, Levi never minded.
"I'm gonna go to the tea stall. You want the cart?" He asks and you nod.
"What kind of fruit do you want?" You indicate where you're headed next.
"Citrus." As if you didn't know. You kiss his cheek before parting for a little bit.
Levi heads to his favorite tea vendor and sees she has some new stuff this year.
"Hi there Mr Ackerman!" She always tries to remember her returning customers.
He gives a polite hello and soon has overspent on not only his favorites but some new assortments he doesn't remember her having last season. He makes sure to get cinnamon as well, one of your favorites.
Levi passes by someone selling hats, the wide brim straw sun hat with with a purple ribbon catching his eye.
He's pretty sure you've mentioned wanting one, especially on warm days. Picking one up along with some long stemmed sunflowers at the next vendor, he goes to find you.
You're no longer at the fruits, thank goodness, so he goes towards the back.
He stops dead in his tracks after he spots you. In the short time you've been away your hair has been done into one long braid and you're currently modeling a blue and yellow sun dress in another vendors mirror.
You're beautiful in anything, and Levi can hear his heart pounding. Truth be told you could probably wear rags and would still outshine everyone else.
"Levi! You like?" You say, bounding towards him and breaking this thoughts.
He can only nod, reaching to pick up your braid.
"Oh! Some young girls are learning about business and charging five dollars and I wanted to support them. Only took a few minutes. They did so good!"
Levi leans forward to give a quick kiss to your lips, place then hat on your head and holds out the sunflowers.
"This is so great! Thank you." You gush about the things he's gotten you.
You go back to the dress stall to pay and pick up the cart, leaving your other outfit in the tote. Levi takes both the cart and your tote bag, leaving you with the flowers and an extra paper bag you didn't put in the cart.
Levi sees you got the oranges he requested, along with apples, pomegranates, pears and a whole pineapple that, again, you'll probably make him deal with.
You both take a seat for a little while, enjoying warm pastries and agua frescas.
"What's in the bag?" He asks as you've not let go of it yet.
"Your favorite tea vendor? Well, her partner is running a second stall full of products." You pull out the things in the bag.
"It's a tea warming plate." You say as Levi examines it. "Charge it and it'll last for days. Now when you get busy with work it'll always be warm."
"Why don't I already have one of these?" He wonders.
You shrug and dive back into the bag. "Well, now you do. And also, Bath Brew Pockets, and socks."
Levi stares at what surely are gag gifts. "You mean, I can bathe in tea?"
"Or we, unless you want it all to yourself." You then hold up the socks. His black pair with pink writing reads 'If You Can Read This' on one and 'Bring Me Tea' on the other. Your pink pair with black writing reads 'If You Can Read This' and 'Get Your Own.'
Levi chuckles. "These are ridiculous."
You grin. "Well yeah. You gonna use everything?"
"Of course." He would always love everything you picked.
After finishing your snack it's on to grab multiple varieties of honey, apricot and also cherry jam, two loaves of fresh bread and some muffins from your favorite bakery stall, a focaccia and a dozen rolls from another one, and a two pound block of feta, which Levi says you don't need, but in the tote it goes.
You can't help but want the hummingbird mosaic wind chime, and Levi agrees if you promise to put it up, and not store it away. He then goes for yet another plush throw blanket for you to cozy up together under while you pretend there's room for coconut bowls with matching utensils in your cabinets.
It's soon clear that your tote, cart, and both yours and Levis hands are full.
"I think that's all we can manage, love." He tells you.
You know he's right but think there's something you're missing. You could pass on the chocolates this time, but there's something else.
"Oh, what about the orange juice? It's always so good!" You couldn't leave without that.
"Right." He sighs lightly. No use reminding you of all the actual oranges you just bought.
Balancing another bag on the carts handle he tells you to wait for him and is soon back with a gallon of fresh squeezed orange juice.
"Yay!" You are happy to see the new bag.
You start back with all your items and suddenly gasp, remembering one more thing.
"No, I'm sorry, there's no more hands." Levi says, trying to guide you forward with just his knee.
"But the soaps!"
"Yes and the candles and the olive oils and the pies and the goat milk." Levi lists off some random things you'll probably want next time you come. "I mean, we have to get through all this first."
"The pies." You frown at what you missed, but there really is a lot of food.
You get to the car and load everything in, settling into the passenger seat for the ride home.
"How about we bake our own pie with the stuff we have? We can always come next week." He says, taking your hand in his. You usually only came once a month during the season since you always bought so much, but there were exceptions. Besides, there were things he'd forgotten about, too.
You look at the sunflowers you're holding in front of you. It's been a lovely outdoor morning with the man who holds your heart. "What kind of pie?" Everyday with him was a good day.
He looks over and smiles, bringing your hand to his lips. "Anything you want, angel. But first, we nap."
You look back and return his smile, wondering if Levi knows how happy he makes you, and hoping you do the same for him.
Silently, he's thinking the same about you.
an- In honor of my favorite outdoor market that just opened for the season! I'll mention again that domestic fluff with Levi in everyday life is my favorite thing. And pairing him and reader with food haha.
COVID19 and Daily essentials: How women are using MyBy to untangle not only their woes but, also of essential suppliers collectively
MyBy was developed to answer the inconveniences faced by every household daily. It’s a platform that connects trusted local vendors and services providers to their nearby communities and families. With stay-at-home becoming the new normal, here’s how women of Bengaluru are taking the lead using MyBy.
When the Indian government announced a national lockdown to contain Coronavirus, normal lives were hit and confusion surfaced among the citizens. People started panic buying, and stocks at most of the supermarkets depleted.
The e-commerce giants such as Amazon and Flipkart suspended their non-essential categories. Many customers faced cancellation issues from hyperlocal delivery giants. The circulars from the government authorities clearly stated that the suppliers of essential goods — grocery shops, pharmacies, etc.. are exempted from stay-at-home orders. Yet the fog of anxiety in people’s minds resulted in impulse panic buying — an unnecessary reflex.
Amidst this chaos, it was the Kirana stores and the local vendors who faced the brunt of the panic in connection with the lockdown. They continued to witness a swarm of people gathering in front of their store.
Certain localities, fearing of getting infected, did not allow vegetable vendors and milkmen to enter their lane. This added more woes to the family that was eagerly waiting to buy their stock. Clearly panic was brewing at its best capacity.
Women and their Kirana Re-connect
Ms. Manmeet Bevli, a former IT professional and an entrepreneur at a coaching center in the city, was one among many that were grappling with this uncertain time.
She says “Before the stay-at-home days became the new normal, groceries and other errands were fulfilled by the delivery players. I would buy my vegetables from the likes of BigBasket, and the pantry was refilled from items purchased from Amazon. Just before the lockdown was announced like any other citizens, we too rushed to stock the essentials. Post the lockdown we were adapting to self-isolation days, staying at home, keeping the distance away from the crowd.”
“I knew some of the vendors nearby my community before I got used to big delivery companies. I was reconnecting with them after five or six years, it was a big challenge for me to procure items from these places. Many people from my community in Mahadevpura, like me, were going to these suppliers to meet their daily needs. The vendors were facing a surplus of demands and found themselves in a spotty situation. Every day they were receiving bulk orders and this piled up subsequently.” she added.
Women untangling their woes and the vendors
Women like Manmeet are coming to the forefront to untangle not only their woes but also of essential suppliers collectively. Overnight, they brought many community women on to anything from Whatsapp or Telegram groups, created google sheets on shared drives etc to consolidate orders from the community households and organized vendors to fulfil them.
“Everyone was going crazy as nothing tallied, what people ordered vendors did not have, what vendors had people did not know they could order, prices of fruits and vegetables were changing daily, payment to vendors was another additional chore…… whole thing was a nightmare”.
Spread throughout the city was the tech team of a startup working day-and-night from their homes to tune their product to help the communities fight the Covid situation. What better time than now, for local startups to come in the front to the rescue.
Manmeet, while discussing her woes with another friend from the same community, came across MyBy, an all-in-one app for everyday needs. The app was developed to answer the inconveniences faced by every household daily. It’s a platform that connects trusted local vendors and services providers to their nearby communities and families.
Watch here: https://youtu.be/I1duslFlDzQ
She realized the potential of the app as the need of the hour and started exploring it on her own. After understanding the functional and operational aspect, she was on a mission to help other women with their essential needs. The next step was to reach and teach the vendors about this app.
“I would take screenshots of the app to help the vendors and local farmers onboard the app. Along with me, many other women started listing the nearby vendors, Kirana store owners, and local farmers. We reached out to them and explained how this app can ease both our problems. Initially, there were some challenges, but once they got the hang of the concept, their supply chain was streamlined, the payments were made online. For customers like me and others from my community of 150 villas, the app helped in reducing our anxieties to hoard the essentials and released our panic buy pangs. Now we are getting everything predictably and with ease . including fish, meats & mangoes!”, added Manmeet.
The vendors, essential suppliers, and local farmers are not shying away from the fact that the app indeed helped them in easing their immense difficulties. When approached to know about the experience on MyBy, Nithin Raj, who runs a vegetable shop under the name Namma Fresh Coconuts and Vegetables in the city, was all praises.
He said that before MyBy, only limited people knew about his business. He runs his shop along with his other three family members. When the lockdown was announced, he saw a long queue in front of his shop. With a few inconveniences, he managed to meet customer’s demands. However, the following days got him worried about his own safety. He did not want to get infected and had no option to suspend the shop’s operation as its his only livelihood.
“MyBy came to my rescue. We are maintaining safety measures while packing the vegetables. With no direct contact, I am glad that I can keep myself and my family away from unnecessary crowd. My business has seen a 20% rise with daily orders coming in. Now many people are familiar with my shop’s name, and it feels good to serve people.”, concludes a chirpy Nitin who was busy planning his supplies.
On a positive note
While the lockdown is extended till May 3, 2020, it looks like women have hit the right notes with MyBy on their side. The mission of the app is to make everyday interactions with local suppliers easy even while adapting to social-distancing. Indeed nobody saw this unprecedented time coming our way, but this also leaves us with a thought that such situations cannot be left ignored. Someone rises to the occasion — this time it was the women in our communities!
The Lure of H Mart, Where the Shelves Can Seem as Wide as Asia At the H Mart on Broadway at 110th Street in Manhattan, the lights are bright on the singo pears, round as apples and kept snug in white mesh, so their skin won’t bruise. Here are radishes in hot pink and winter white, gnarled ginseng grown in Wisconsin, broad perilla leaves with notched edges, and almost every kind of Asian green: yu choy, bok choy, ong choy, hon choy, aa choy, wawa choy, gai lan, sook got. The theme is abundance — chiles from fat little thumbs to witchy fingers, bulk bins of fish balls, live lobsters brooding in blue tanks, a library of tofu. Cuckoo rice cookers gleam from the shelves like a showroom of Aston Martins. Customers fill baskets with wands of lemongrass, dried silvery anchovies, shrimp chips and Wagyu beef sliced into delicate petals. For decades in America, this kind of shopping was a pilgrimage. Asian-Americans couldn’t just pop into the local Kroger or Piggly Wiggly for a bottle of fish sauce. To make the foods of their heritage, they often had to seek out the lone Asian grocery in town, which was salvation — even if cramped and dingy, with scuffed linoleum underfoot and bags of rice slumped in a corner. Il Yeon Kwon, a farmer’s son who left South Korea in the late 1970s when the countryside was still impoverished from war, opened the first H Mart in Woodside, Queens, in 1982. It was the middle of a recession. At the time, only about 1.5 percent of the American population was of Asian descent. Later that year, Vincent Chin, a Chinese-American, was beaten to death in Detroit by two white autoworkers who were reportedly angered by the success of the Japanese car industry. Asian-Americans, a disparate group of many origins that had historically not been recognized as a political force, came together to condemn the killing and speak in a collective voice. Today, as they again confront hate-fueled violence, Asian-Americans are the nation’s fastest-growing racial or ethnic group, numbering more than 22 million, nearly 7 percent of the total population. And there are 102 H Marts across the land, with vast refrigerated cases devoted to kimchi and banchan, the side dishes essential to any Korean meal. In 2020, the company reported $1.5 billion in sales. Later this year, it’s set to open its largest outpost yet, in a space in Orlando, Fla., that is nearly the size of four football fields. And H Mart has competition: Other grocery chains that specialize in ingredients from Asia include Patel Brothers (Patel Bros, to fans), founded in Chicago; and, headquartered in California, Mitsuwa Marketplace and 99 Ranch Market — or Ranch 99, as Chinese speakers sometimes call it. They’re part of a so-called ethnic or international supermarket sector estimated to be worth $46.1 billion, a small but growing percentage of the more than $653 billion American grocery industry. Many of these chains have a particular focus (H Mart’s is Korean products), but also attempt the difficult feat of catering to a variety of Asian-American groups with different tastes and shopping preferences. Mr. Kwon’s first store still stands in Woodside, with a blue awning that bears H Mart’s original name, Han Ah Reum. This is commonly translated from Korean as “an armful,” but has a poetic nuance, invoking warmth and care, as in an embrace. H Mart is “a beautiful, holy place,” writes the musician Michelle Zauner, who performs under the name Japanese Breakfast, in her new memoir, “Crying in H Mart,” published last month. The book begins with her standing in front of the banchan refrigerators, mourning the death of her Korean-born mother. “We’re all searching for a piece of home, or a piece of ourselves.” As the 20th-century philosopher Lin Yutang wrote, “What is patriotism but the love of the food one ate as a child?” For an immigrant, cooking can be a way to anchor yourself in a world suddenly askew. There is no end to the lengths some might go to taste once more that birthday spoonful of Korean miyeok guk, a soup dense with seaweed, slippery on the tongue, or the faintly bitter undertow of beef bile in Laotian laap diip (raw beef salad). When Vilailuck Teigen — the co-author, with Garrett Snyder, of “The Pepper Thai Cookbook,” out in April — was a young mother in western Utah in the 1980s, she ordered 50-pound bags of rice by mail and drove 150 miles to Salt Lake City to buy chiles. She had no mortar and pestle, so she crushed spices with the bottom of a fish-sauce bottle. Around the same time, Thip Athakhanh, 39, the chef of Snackboxe Bistro in Atlanta, was a child in a small town in east-central Alabama, where her family settled after fleeing Laos as refugees. They fermented their own fish sauce, and her father made a weekly trek to Atlanta to pick up lemongrass and galangal at the international farmers’ market. The essayist Jay Caspian Kang has described Americans of Asian descent as “the loneliest Americans.” Even after the government eased restrictions on immigration from Asia in 1965, being an Asian-American outside major cities often meant living in isolation — the only Asian family in town, the only Asian child at school. A grocery store could be a lifeline. When the writer Jenny Han, 40, was growing up in Richmond, Va., in the ’90s, her family shopped at the hole-in-the-wall Oriental Market, run by a woman at their church. It was the one place where they could load up on toasted sesame oil and rent VHS tapes of Korean dramas, waiting to pounce when someone returned a missing episode. A few states away, the future YouTube cooking star Emily Kim — better known as Maangchi — was newly arrived in Columbia, Mo., with a stash of meju, bricks of dried soybean paste, hidden at the bottom of her bag. She was worried that in her new American home she wouldn’t be able to find such essentials. Then she stumbled on a tiny shop, also called Oriental Market. One day the Korean woman at the counter invited her to stay for a bowl of soup her husband had just made. “She was my friend,” Maangchi recalled. The H Mart of today may be a colossus, but it remains a family business. Mr. Kwon, 66, has two children with Elizabeth Kwon, 59, who grew up two blocks from the Woodside shop (where her mother still lives) and oversees store design. From the beginning, it was important to her that the stores were clean, modern and easy to navigate, to defy the stereotype of Asian groceries as grimy and run-down. “It’s so emotional, shopping for food,” said her son, Brian Kwon, 34. “You don’t want to be in a place where you feel like you’re compromising.” He never intended to devote his life to the store. But not long after he went abroad to take a job in Seoul — seeking to improve his Korean — his father asked him to come home and look over the company’s books, to make sure everything was running smoothly. It was, as Mr. Kim of the Canadian TV show “Kim’s Convenience” might say, a sneak attack. Once Brian Kwon entered the office, he never left. “My father called it his ‘golden plan,’ after the fact,” he said ruefully. He is now a co-president, alongside his mother and his sister, Stacey, 33. (His father is the chief executive.) For many non-Asian customers, H Mart is itself a sneak attack. On their first visit, they’re not actually looking for Asian ingredients; customer data shows that they’re drawn instead to the variety and freshness of more familiar produce, seafood and meat. Only later do they start examining bags of Jolly Pong, a sweet puffed-wheat snack, and red-foil-capped bottles of Yakult — a fermented milk drink that sold out after it appeared in Ms. Han’s best-selling novel-turned-movie “To All The Boys I’ve Loved Before.” To be welcoming to non-Koreans, H Mart puts up signs in English. At the same time, the younger Mr. Kwon said, “We don’t want to be the gentrified store.” So while some non-Asians recoil from the tanks of lobsters, the Kwons are committed to offering live seafood. Deuki Hong, 31, the chef and founder of the Sunday Family Hospitality Group, in San Francisco, remembers the H Mart of his youth in New Jersey as “just the Korean store” — a sanctuary for his parents, recent immigrants still not at ease in English. Everyone spoke Korean, and all that banchan was a relief: His mother would pack them in her cart for dinner, then pretend she’d made them herself. Later, as a teenager, he started seeing his Chinese- and Filipino-American friends there, too, and then his non-Asian friends. Spurred by postings on social media, young patrons would line up to buy the latest snack sensation — “the snack aisle is notorious,” Mr. Hong said — like Haitai honey butter chips and Xiao Mei boba ice cream bars. (The current craze: Orion chocolate-churro-flavored snacks that look like baby turtles.) In “Mister Jiu’s in Chinatown,” a new cookbook by the chef Brandon Jew and Tienlon Ho, Mr. Jew, 41, recalls Sunday mornings in San Francisco with his ying ying (paternal grandmother in Cantonese), taking three bus transfers to traverse the city, on a mission for fresh chicken — sometimes slaughtered on the spot — and ingredients like pea shoots and lotus leaves. He still prefers “that Old World kind of shopping,” he said, from independent vendors, each with his own specialties and occasional grouchiness and eccentricities. But he knows that the proliferation of supermarkets like H Mart and 99 Ranch makes it easier for newcomers to Asian food to recreate his recipes. “Access to those ingredients leads to a deeper understanding of the cuisine,” he said. “And that in turn can become a deeper understanding of a community and a culture.” These days, even mainstream markets carry Asian ingredients. Ms. Teigen, who now lives in Los Angeles, often buys basics like fish sauce, palm sugar and curry paste from the Thai section at Ralph’s. Still, she goes to 99 Ranch for coconut milk, whole jackfruit and, above all, garlic in bulk — “a giant bag that I can use for months.” (Garlic is an urgent matter for Asian-Americans: Ms. Zauner, 32, writes in “Crying in H Mart” that the store is “the only place where you can find a giant vat of peeled garlic, because it’s the only place that truly understands how much garlic you’ll need for the kind of food your people eat.”) But Meherwan Irani, 51, the chef of Chai Pani in Asheville, N.C., and Atlanta, feels that something is lost when you buy paneer and grass-fed ghee at a Whole Foods Market. You miss the cultural immersion, he says, “getting a dunk and having horizons broadened.” “An Indian grocery is not just a convenience — it’s a temple,” he said. “You’re feeding the soul. Come in and pick up on the energy.” In the TV special “Luda Can’t Cook,” which premiered in February, Mr. Irani takes the rapper Ludacris to Cherians, an Indian supermarket in Atlanta. Once Mr. Irani had to scrounge for spices like cumin and turmeric at health food stores; now, surrounded by burlap sacks stuffed with cardamom pods and dried green mango, he tells Ludacris, “This is my house.” The writer Min Jin Lee, 52, remembers how important H Mart was to people working in Manhattan’s Koreatown in the ’80s, when it was still called Han Ah Reum and “tiny, with almost no place to negotiate yourself through the aisles,” she said. (It has since moved across West 32nd Street to a larger space.) Her parents ran a jewelry wholesale business around the corner, and relied on the store for a cheap but substantial dosirak (lunch box) that came with cups of soup and rice. She sees the modern incarnation of the store as a boon for second- and third-generation Korean Americans, including thousands of Korean-born adoptees raised by white American parents, who “want to find some sort of connection to the food of their families,” she said. “There aren’t gatekeepers to say who’s in or who’s out.” Maangchi moved to Manhattan in 2008, and used to buy most of her ingredients from one of the H Marts in Flushing, Queens. (These days she just walks to Koreatown.) To save money, she would take the subway, bringing an empty backpack and her own shopping cart, then walk for 20 minutes. “Once I get there, my heart is beating,” she said. On the way home, she’d stop at a barbecue spot and drink soju. “Come home drunk,” she said with a laugh. Sometimes when she’s at H Mart, one of her more than five million YouTube subscribers recognizes her and flags her down. Those seeking advice (or a photo op) are mostly non-Korean. But, she said, there are also “old ladies who come up to me and say, ‘I forgot everything — I left Korea long ago.’” Recently, with the rise in incidents of violence against people of Asian descent, her fans have been sending her messages: “Maangchi, I’m so worried about you these days.” This is the paradox: that at a time when Americans are embracing Asian culture as never before, at least in its most accessible forms — eating ramen, drinking chai, swooning over the K-pop band BTS — anti-Asian sentiment is growing. With visibility comes risk. For Ms. Lee, this makes H Mart a comfort. “I like going there because I feel good there,” she said. “In the context of hatred against my community, to see part of my culture being valued — it’s exceptional.” Source link Orbem News #Asia #lure #Mart #Shelves #WIDE
I just started Trio of Towns :D! It’s really great so far, but does anyone have any tips to get started?
TIPS TO GET STARTED UNDER THE CUT!
1. In this game, you can’t catch/sell bugs but Dessie will give you rewards (gems and fertilizer, for example) when you “find” them. Face the bug and click A, it will tell you its name. Save before finding the 100th bug and reload the Dessie reward event until you get 3 gems, which sell for about 11-13k (a big amount at the beginning). info
2. Buy and plant a lot of crops, and if you have spare money fertilize at least one (1) square. You can sell all the low-level start crops OR cook them before selling them. Keep the higher level star for the Harvest Festival or to make seeds from it with the seed maker.
3. You can also win the first Harvest festival with just the fertilizer you can buy at the shop. Plant the seeds but not water them. As long as it stays at the seed stage, it will not wither. Even if it sprouts, it will last several days without water too. So if you plant them as soon as possible (use potatoes, they take longer to grow that radish, and you are sure to get several rainy days during the month) you can easily get crops with the first parameter almost full at the end of the month. Since you cannot get the seed maker until summer, this is the best way to get crops with parameters as high as possible during the first spring.
If you can water it twice a day start watering it on the 26th, if you can only water them 1 time a day, start on the 23rd.
4. Do as many job requests as possible. At the beginning, you will have a lot of free time each day since stamina goes down quite fast in veteran mode. There is a job offered by Ford where you have to try some medicine he prepared (save before you take the job; the effect of the medicine is random, but some replenish your stamina fully, which is useful if your current stamina is almost zero), with base payment of 1500. So if you have been completing jobs regularly, you can get around 3k easily (plus stamina recovery). info info
In addition to money, you get items and food as payment for the jobs. The food you get is something the giver likes. And in occasions is his/her favorite thing or someone else’s. For example, Frank sometimes gives you pizza, which is his favourite thing. Ford sometimes gives you a dish, I don’t remember the name, which Mitra likes the best.
Always save some crops and flowers for job requests and save basically every milk/egg for job requests.
5. When mining, if you wait 3 or more days before mining again, you will get better drops that mining everyday. And save before mining and if you don’t get the ore you want reload and try again. But at first, is better to mine everyday, since you get black stone and iron easier, and that is what you need for the first tool upgrade to reduce stamina consumption. Get 45 black stones before upgrading your hammer (Don’t upgrade your hammer’s efficiency too quickly because if you blow past ex. efficiency lvl 3, black stone gets shunted out of the “loot table” for the most part. I ended up having to buy a second hammer to keep at a lower level). And save 5 jade and 5 black stone to improve the range of your watering can to 1x2 if you have a lot of crops. info info which ores to sell or NOT info DON’T SELL BLACK STONE AND BRANCHES AND DON’T CONVERT THEM TO ROCK AND LUMBER. D O N O T.
But honestly DON’T sell your ores, save them. You will need them. You can get a lot of money doing other things.
6. Get a cow and chicken asap. In this game, animals have some “stats” you must level up if you want to get better byproducts info
When buying your first livestock, don’t worry about buying the milker and brush; if you do, Frank will give you 2000 G and if you don’t he will just give you the items for free so you don’t lose anything in this situation.
Try to get one of every type of livestock.
Get 2 herding pets ASAP.
7. Town link ranks info if you want to plan ahead of time which crops/items you need to save so you don’t get stuck waiting until the NEXT YEAR to unlock a rank. But SAVE 20 SWEET POTATOES FROM YOUR 1ST FALL.
8. Once you get 5,000 FP with a villager or 10,000 FP with a marriage candidate to be invited to eat when you talk to them while they’re eating. info
list of items to gift early in game
9. Soft soil makes crops grow faster, as well as watering twice a day.
10. Pressing L button while walking or running next to someone counts for the “daily talk” friendship boost. It doesn’t work if you’re riding your horse.
11. If you want to chop a lot of rocks/branches: GO TO INVENTORY > LOOK FOR THE ITEM YOU WANT TO CHOP > PRESS A > SELECT PLACE > CHOSE THE AMOUNT YOU WANT TO CHOP > CHOP THEM ALL AT ONCE
12. SAVE WEEDS!!!! THOSE ARE FERTILIZER YOU CAN USE WHEN YOU GET THE FERTILIZER OR AND LIQUID FERTILIZER MAKER!!!!
13. Giant crops give you 5 dishes when you cook them.
15. Eat fish pie if you want to restore stamina. It’s 500G in westown’s restaurant. (But you can eat for free with villagers, but it’s nice to know other options)
16. GROW AND SAVE COCONUTS AS SOON AS YOU CAN (year 2 - summer) you’ll need 15 of them, so save them.
17. You can pick up stuff around your farm in the “arrange farm” mode. Saves time!
18. If you have some wilted crops or it’s the end of the seasons go to the… THING where you can arrange your farm and return the fields to the inventory and place them again it will return clean and you will have to plow the soil again tho.
19. FARM CIRCLES YOU SHOULD BUILD ASAP. INFO
IN THIS GAME YOU CAN COOK BATCHES AND IT ALL COUNTS TO THE TROPHIES. EVERY COOKING TROPHY YOU UNLOCK IT WILL GIVE YOU A BOOST % IN THE SELLING PRINCES OF THE MEALS. COOK 100 TO GET THE FIRST BOOST. INFO
Buy a pudding recipe. Use 1 egg and 1 milk, and the pudding is worth 858G. That is like quadruple what they were worth ingredients alone. And it is an easy recipe to get almost full stamina back.
Westown: Once you get the Corn Bread recipe from Brad in Westown and can purchase Corn Meal from a vendor in Westown for 336G a piece you can sell the made Corn Bread for 432G
Tsuyukusa: Once you have the Rice Porridge recipe from the Teahouse (D rank) you can purchase Soy Sauce and Rice (not the stalk, the second one) from Ittetsu for 196G and 105G each and turn it into Rice Porridge which sells for 540G.
Lulukoko: Once you have the Sashimi recipe you can purchase Soy Sauce from the vendor in Tsuyukusa and a medium fish from Caolila for 245Gand sell the Sashimi for 648G.
The profit for a stack of Corn Bread is 9,504G, for Rice Porridge it’s 23,661G and for Sashimi it’s 20,439G.
Corn Bread is a loss for Veteran mode, but Rice Porridge has a 7,920g profit per stack
For an even higher profit margin you can make Smoothie. You need Lulukoko at A rank OR to ship 100 dishes to Lulukoko to unlock it and the ingredients are milk (purchase for 245G), yogurt (purchase for 245G) and a fruit (lychee is the cheapest I have unlocked and it’s 436G). The smoothie with the 100 recipe bonus sells for 1380G but it still has a profit without the bonus. The profit per stack is 44,946g. You could also just use your own milk from your cows for a larger profit, but buying allows you to sell in bulk. This recipe also has the money discount buff!
Purchasing ten stacks of corn meal/soy sauce/medium fish/etc. (ten stacks of anything really) will give you enough town link rating to get to the next lock, and if you cook these in high quantities you’ll be increasing your cooking skill while cutting a profit.
There you go a lot of tips from a lot of sites lmao but I’ve used all of them in my file so yeah if you need more just message me at @aegeanfarm :D -Admin Alex
A touch of Bangkok on Dorchester Ave.: Just Thai Kitchen in Fields Corner
The center of a pandemic does not appear to be like the suitable time to open up up a cafe, but don’t tell that to Seasa Hofman. The Jamaica Basic resident by way of Thailand has many years of restaurant practical experience less than his belt many thanks to his aunt, who ran the Montien Thai cafe in Chinatown for 35 decades in advance of providing it before this yr.
Keen to trade in the roomy downtown eatery for extra intimate digs of his personal, Hofman jumped at the prospect this summer when a retail space opened up on Dorchester Avenue in Fields Corner.
“We were being lucky to get the place,” admitted Hofman. “But we hope to continue to be and be below a prolonged time.”
The area, which up until just lately housed the Magic Wok restaurant, is now home to Just Thai Kitchen area, where patrons can find genuine Bangkok-model street food items like stir-fry noodles, fried rice, and spicy curry dishes.
Because opening at the close of September, the eatery has received a warm welcome from the community, reported Hofman.
“Everybody has been coming in and telling us ‘Welcome to Dorchester.’ People today have been truly helpful, and it appears to be like they are delighted we are right here.”
The restaurant stands out as one of number of Thai establishments in the area, which is home to a robust Vietnamese culinary scene. Hofman thinks his spot stands to reward by giving anything different.
“Vietnam and Thailand are neighbors, but the food’s a bit various,” he spelled out. “We want to give people an concept of what authentic Thai foodstuff is like, and I assume in this article in Boston men and women constantly like to test a thing new.”
The interior of the cafe has been refreshed with a sharp remodeling occupation and a dash of shiny paint, as nicely as a painting gifted by a good friend with a collage of Thai landmarks and cultural icons. On an opposing wall, a Television set display rolls footage of a display checking out Thai street foods.
In encouraging neighbors to sample Thai food items, Hofman and his chef, a fellow Thai-born Massachusetts resident named Pong, are also hoping to boost Thai society.
“A ton of Thai foods is about balancing,” stated Pong, describing the cuisine as an natural kind of fusion. “We’re in amongst India and China, so we type of take a bit from stir fry and curry and make it our very own. But Thai food items is also fairly balanced. We use coconut milk alternatively of dairy, so it’s gentle. We also care about our vegan and vegetarian customers, and have a whole lot of options for them, as perfectly.”
The chef has also infused some identity into the menu with a “Just Genuine Thai” segment featuring dishes like Khao Kapow and Khao Katiem that he claims are just as spicy as what 1 would get from a street vendor in Thailand.
A current distinctive spotlights a person of Pong’s private favorites— crispy ginger “JTK” wings— and with colder weather incoming, he’s also planning for seasonal specials like Massaman curry and Tom Yum, a scorching and bitter soup.
As the small Dot Ave. area can only accommodate a few patrons at a time, and with a foreboding pandemic forecast on the horizon, consider-out and shipping by expert services like Uber Eats and Doordash will probably make up the bulk of Just Thai orders.
But, Hofman said, the heat reception from his new neighbors and a reasonably regular stream of buyers has him feeling optimistic. “In the previous couple weeks I imagine we’ve sold out of almost everything on the menu,” he said, “which is very good. We want folks to get the total, real expertise.”
Why should you use Organic Soaps?
Before I answer why you should use organic soaps, let me ask, are you a regular user of antibacterial soaps? If yes, then you must have experienced its effect on the skin after every use. It is majorly because they are synthetic in nature and are made of petroleum-based lathering agents, harsh dyes and dangerous preservatives. On the other hand, organic soaps are simply better for your skin. They are filled with natural ingredients like glycerin, plant-derived base oils and essential oils.
It doesn’t surprise us when a lot of our customers say that their skin feels better after using our handmade soaps and that there are improvements in their acne and eczema. Organic and natural soaps are cruelty-free which makes them a perfect choice for sensitive skin. Most of the people use antibacterial soaps as they believe that it will keep them safe from any disease and germs. The reality may shock you, that antibacterial soaps are not actually what they are promoted to be.
You are in fact safer using our natural organic-based soaps and mild hot water to keep your hands safe and germ-free!
WHY SHOULD YOU STOP USING ANTIBACTERIAL SOAP TODAY ITSELF?
According to the FDA, there is not sufficient scientific evidence to display that normal retail antibacterial soaps are better than plain soap and water for the prevention of diseases. The advantages of antibacterial soap still have not been tested and tend to generate more issues than solutions.
In fact, the FDA identifies that antibacterial soaps include particular chemical ingredients, including triclosan and triclocarban, that can be unfavourable. These chemicals are not safe for daily use over a particular period of time, especially for children!
There is no proof that these chemical ingredients are safe, in fact, some producers have already started eliminating their products from stores that contain these chemicals.
LET’S TALK ABOUT THE BENEFITS OF ORGANIC SOAPS:
1. Most Soaps are Non-cruel
The best thing about using our organic soaps is that all the ingredients in them are cruelty-free. This implies that none of the ingredients or chemicals is tested on the animals. At Kaura, we make sure that the vendors provide cruelty-free ingredients. Not just this, we also ensure some of them are dermatologically tested and verified on human skin, making sure that it is appropriate for those with sensitive skin.
2. Very Smooth on Skin
Natural organic soaps are much softer and smoother on the skin, very suitable for those who have sensitive or soft skin. Most people love using the natural organic soaps that moisturize the skin and keep their hands soft. If you are someone who follows a skin care routine, you must switch to organic soaps as they are more gentle on skin.
3. No Chemicals or Pesticides
One of the best things about organic soaps is that they are not only healthy to consume but also to produce. They do not include any chemicals, fertilizers or pesticides which keeps you and your family safe. Every ingredient is natural, with each plant or herb utilized in its manufacturing being absolutely free from any pesticides or harmful chemicals. Hence it's a cycle of healthy production, consumption, and disposal because what goes around comes around.
4. Environmentally Safe
Natural organic soaps are environmentally safe. As we read above that no chemicals or pesticides are used in the production, they become way more biodegradable as compared to their antibacterial synthetic counterparts. They are easily disposable in nature which is a plus to the environment safety.
5.Supports Economy
Organic Soaps are generally made by crafters in the local community or local market that helps in the circulation of money locally. This business supports multiple farmer families also. Any consumer can access the producer directly at a local store or a farm market. They thus act as a support for the economy.
6. It has Better Healing Properties
Organic soaps tend to have healing properties for skin conditions such as acne, rashes, eczema, and sunburn as they possess natural ingredients like essential oils, aloe vera, coconut oil, peppermint, turmeric, honey,etc..
7. Organic soaps have Glycerine
Antibacterial soaps do not keep the glycerin content as they are used for a lateral range of products. Major skincare products that are chemically prepared lack glycerine while on the other hand organic soaps have this natural humectant. Glycerine helps to maintain the moisture of the skin and so it is one of the major ingredients in most organic soaps. Two other natural ingredients that help with moisture maintenance are aloe and honey. Use of glycerine is one of the factors that contribute to the high cost of organic soaps.
8. It is rich in antioxidants
Antioxidants protect your skin by limiting the production of free radicals, which can damage skin cells. They leave your skin looking younger and fresh. Kaura’s Organic soap ingredients are loaded with antioxidant properties. So if you use organic soaps they can help you slow down the skin’s ageing process and help in rejuvenating the skin.
9. No Harmful Chemical Antibacterial Toxins
Kaura products are free from harmful chemical antibacterial toxins like triclosan, paraben or any other petrochemicals. We understand that these demons are completely harmful to your skin as they disrupt the hormones and affect the reproductive system too. We use natural antibacterials like tea tree, rosemary, peppermint, lavender essential oils. These do not have any adverse effects. These essential oils also add up to the aroma and provide aromatherapy in addition to cleansing the skin.
10. Easy to customize
Organic soaps are usually made in small batches and thus can be customised as per the client’s requirements. Consumers also get a lot of variety in ingredients, aroma, texture, colour shape and size. At Kaura, we invented Unicorn whipped soap with all organic ingredients. We also offer customised soaps in bulk orders.
11. Maintain PH level
The PH level of organic soaps by Kaura is almost 5.5, which means that they are perfectly balanced and gentle on all skin types. Extra virgin coconut oil is one of the top ingredients that not only provides moisture to the skin but also maintains the ph level of your skin.
12. No Preservatives
Antibacterial soaps have added preservatives that increase the shelf life of the soaps, however, they are harsh and may cause irritation on the skin. On the other hand, Organic soaps have a limited shelf life because it's all-natural without any additional preservatives.
Conclusion
Natural organic soaps are more suitable for your skin. Kaura recommends you switching to organic soaps right away. You can experience the difference with our wide range of organic handmade soaps.
New top story from Time: A Guide to Expert-Tested Cooking and Baking Substitutes if You Can’t Find Your Usual Ingredients Anywhere
As we enter the second month of stay-at-home orders across the U.S., the strain on the home kitchen is already clear; stores and vendors are adjusting to changing food demands and the supply chain has been impacted.
Certain ingredient shortages we encounter while managing with limited grocery shopping runs make cooking dinner — and breakfast, and lunch, and snacktime, and dessert, and midnight snack — all the more difficult.
For those battling food insecurity, school meal services and food banks are working overtime to help provide necessary meals and supplies. But for those looking at empty pantry shelves while delaying a grocery trip to stock up further on in-demand items like beans and oat milk, a few innovative swaps can mean that a missing ingredient here or there won’t throw off your meal planning. For advice, TIME turned to Alissa Wagner, chef and co-founder of the popular downtown New York City restaurant Dimes and co-author of the recently published cookbook Emotional Eating, as well as baker and Great American Baking Show winner Vallery Lomas, who’s popular on social media as the “Foodie in New York,” and pastry chef and Milk Bar founder Christina Tosi, who has been teaching fans with daily live Instagram tutorials.
Wagner called from her restaurant’s associated market, which is still serving prepared foods — and remains busy and well-stocked. “Start simply and play around with things,” Wagner says. “You really can look at cookbooks and recipes and try not to be intimidated and enjoy it.” Lomas, meanwhile, has been testing out simplified recipes from her studio apartment in Harlem that are “fuss free” and work for smaller crowds — or even portioned just for one. “Don’t let fear of failure stop you,” she said. Tosi keeps things interesting by playing music themed to match her culinary pursuits (like a “queens of pop” playlist while making popovers) — and sharing what she makes, as much as she safely can. “Kitchen time never feels like a chore when you approach it with a generosity of spirit mentality,” she says. “Now is the time to spread the love more than ever.”
Here, Wagner, Lomas and Tosi share their suggestions for what to do when you run out of some of the basics. And while this guide doesn’t cover everything you might need to make your preferred dish of the evening to the recipe’s exact specifications, it might help you come up with some creative solutions. “I like to look at my pantry with a sense of imagination,” Tosi says. “Approach every ingredient with a ‘What does this typically bring to the dish or snack I use it in?’ Write it down and come back to it when you put your apron on.”
Egg Substitutes
Lon Tweeten
Eggs are a refrigerator staple, but once you’ve worked through your regular dozen, you may find yourself uncertain of what to use as a replacement. If it’s a breakfast protein you’re in the mood for, Wagner recommends turning to tofu, which can be prepared as a scramble and lasts a long time in the fridge.
Although eggs are hard to match in taste as a standalone food — and Tosi cautions against trying to replace them in a recipe if it calls for more than a few — there are a number of workable stand-ins. If you’re baking, do as the vegans do: consider swapping in apple sauce or another fruit you can cook or puree, which provides the same binding properties in baked goods as eggs. (Mashed bananas are a common option, too, and very cost-effective if you buy bunches in bulk. They can also be frozen for later use.) Tosi says a neutral-flavored oil could also help provide structure and moisture.
Lomas and Tosi also recommend the “flax egg” — letting a tablespoon of flaxseed meal soak in a few tablespoons of water for a few minutes. The resulting jelly-like concoction will work in lieu of real eggs, and is “every vegan’s favorite trick,” Tosi says.
If you’re looking for egg whites, the water in a can of chickpeas, called aquafaba, will suffice. Meringues, mayonnaise and cocktails like a pisco sour can use aquafaba instead of real egg whites. Vegans have been using the replacement source for years.
Milk Substitutes
Lon Tweeten
When dairy supplies run low, fortunately there are plenty of milk substitutes that are more shelf-stable than perishable dairy. Wagner particularly likes coconut milk, which you can keep in your pantry and will work as a replacement for regular milk when thinned with some water. (“It’s a lot fattier than regular milk,” Wagner explained.)
“Match your milk sub with the flavor profile of what you are baking,” Tosi says. So for bundt and loaf cakes, for instance, she sometimes turns to sour cream and Greek yogurt.
If you have nuts lying around, making your own nut milk is also a possibility: Wagner recommends a three-part water to one-part nut ratio, soaked overnight and blended. A clean t-shirt will do as a strainer, she says. Wagner likes cashew milk, which has a “really nice sweetness — and it’s a little cheaper than almonds,” making it a more cost-effective option. Almonds and oats also work, and Tosi says nut milks are a good option for pancakes, crepes and bar cookies. “I’m not above melting down vanilla ice cream to sub in for milk, either,” she adds. “Embrace all the milky things,” she said. Yes, even whipped cream.
If you don’t have milk, Lomas suggests simply using water instead of milk for a substitute in baking. “And when all else fails,” Tosi notes, “don’t underestimate the power of milk powder,” which you can mix with water, too.
Cheese Substitutes
Lon Tweeten
There is an almost infinite variety of cheeses on the market. But when it comes to the cheese that we use most often, it’s generally as an additive on other dishes for that umami kick. Nutritional yeast will work as a substitute in many pasta dishes, Wagner says. Or for saltiness, you can try out capers and olives, which last in the pantry and fridge and bring in the “salty brininess” you might be missing when you run out of parmesan, notes Wagner.
For Tosi, the pantry or snack cabinet could also hold answers. “I’ll take the flavor packet from my mac and cheese to make my own Cheez-Its, or use a box of cake mix and some cream cheese for a gooey butter cake,” she says.
Butter Substitutes
Lon Tweeten
For cooking, oil — olive, canola or even grapeseed or avocado — can generally be used as a butter substitute, provided you select an oil with a flavor that complements the rest of your ingredients. “It depends on the recipe as to how well this swap will work,” Lomas says. Coconut oil, for instance, has a flavor all its own. Used in a cookie recipe, canola and vegetable oil will result in a “sandier textured cookie,” Tosi says. The conversion is also not a direct one-to-one swap between butter and oil, since butter also has milk fats that an oil may lack; you might need a few tablespoons fewer of oil than butter for a cake, for instance.
Then there’s old school shortening, which Tosi says is a “best bet” for matching butter’s flavor and structure; margarine is another option, although not as flavorful. If the butter is being used as an especially creamy component, like in a risotto, you could try a heavy cream.
Bread Substitutes
Lon Tweeten
If you’re craving homemade carbs — perhaps inspired by the proliferation of amateur baking projects you’re seeing on social media — there’s plenty to choose from. Amid flour and yeast shortages, there are still breads you can make that don’t require yeast.
Cornbread, Wagner says, should fit the bill — provided you can find cornmeal. Simpler bread recipes like focaccia are another option, as it is made without yeast. Tosi turns to her “fool-proof beer bread,” since beer already has yeast in it. (Her recipe: 1 beer, 3 cups flour, 4 teaspoons baking powder, 1 teaspoon salt, ½ cup butter melted.) She also recommends adapting bread recipes by cutting “all but one tablespoon sugar out” and throwing spices and seed in, like za’atar or curry powder, for a more aromatic loaf.
Lomas has been baking basics like wheat bread from scratch using whole wheat flour. Other alternative flours, like rice or chickpea, are common in gluten-free recipes and can be used widely. Wagner likes chickpea flour which is less “gummy” than rice flour and makes “really good savory pancakes.” Tosi suggests cake flour, which has a lower protein content. Nut flours — nuts ground up in a food processor until they are “sandy,” with a few tablespoons of cornstarch to encourage the binding — are her recommendation for cookies. Oat flour (ground up oats) also can work: 1 ⅓ cups oat flour for 1 cup all purpose flour, says Tosi. Lomas is also a proponent of oat flour, which works well in her cookies and is a decently affordable option.
Even beyond the expected flour alternatives, Tosi suggests turning to other dry ingredients that can grind down into a flour-like consistency, like popcorn and pretzels. (“Popcorn flour is fire!” she says, but keep an eye on the overall salt content if you use pretzel flour.)
Sugar Substitutes
Lon Tweeten
When running low on sugar, look to other sweeteners you have at hand: maple syrup and honey, both of which are actually lower on the glycemic index than regular processed sugar, Wagner says. Plus, both maple syrup and honey last a long time without going bad. Lomas even uses honey in her homemade whole wheat bread recipe. Agave is another natural sweetener option.
Tosi suggests thinking even further beyond the basics when it comes to bringing sweetness to a recipe. “Most things you crave late at night can work, too: marshmallows, chocolate, white chocolate chips, peanut butter, sorbet melted down, and candy.”
Brown sugars can also be whipped up at home if need be: light brown sugar can be concocted by adding a splash of maple syrup to granulated sugar, while to mix your own dark brown sugar you can add molasses. And powdered sugar, to top things off? Blend granulated sugar with a pinch of cornstarch. “In the baking world it’s called 10x, in reference to it being ground down 10 times,” Tosi says of powdered sugar’s origins.
You can also look beyond sugar for flavor in your baking. “If you like a salty-sweet combo, throw potato chips, pretzels, butterscotch chips — you name it — in your cookie dough or loaf or pancake batter,” Tosi says.
Meat Substitutes
Lon Tweeten
Alternatives to meat — like plant-based brands Beyond Meat or the Impossible Burger — are buzzy, but can get pricy. To fulfill the central protein portion of a meal, Wagner looks farther afield to vegetarian staples like tofu, which can be bought in bulk for a more cost-conscious solution, or chickpeas. “They’re very filling and versatile; they take to spice and herbs very well,” she says, suggesting a simple preparation with olive oil, fresh lemon juice, sea salt, chopped cilantro and red pepper flakes (or Aleppo pepper if you have it).
Or turn to canned goods. Canned fish — like sardines, anchovies and tuna — is shelf-stable and stores well, and works as a meal centerpiece. Wagner suggests a spin on the classic French Niçoise salad, featuring a canned fish and “any vegetable” you have on hand, or you can serve the fish on toast.
Greens and Vegetable Substitutes
Lon Tweeten
By the end of two weeks without restocking at a grocery, vegetables may have wilted. But Wagner reminds us that “any kind of soft herb” or the green part of a vegetable can be used as a base for a salad or a green addition to a meal, including parsley, basil, cilantro, kale or chard. “Carrot tops, beet greens, even fennel fronds — anything like that you can use, instead of throwing it out,” she says.
And don’t overlook your onions. “One thing people always have lying around that can upgrade anything are onions. You can pickle them easily and throw them into a salad; you can fry them and throw them in with beans, or sauté them into your eggs. It adds a ton of flavor in a really easy way,” she says.
Pickling is a helpful way of extending the lifespan of leftover vegetables, too. “All you really need is vinegar, salt and sugar. Everything else is a bonus,” Wagner says of the pickling process.
