"On the bounce"
Many Jolly hangovers later since our last post...
So how was the new beer you may ask? You've not posted anything for ages, why!? We want our Jolly updates... It was very good, surpassed all expectations! It was a real confidence boosting effort as we weren't sure if it was going to come out at all. Alright sure we've not posted for a while but we've been planning, sorting out things, going to the pub, etc.. We'll share some more of our plans next.
What did you call the beer? After a lot of consideration, pure nonsensical conversation about Peter Mandleson, the shadow cabinet, and political U-Turns we finally decided to call our pale ale "On the bounce" pale ale. As the beer is a perfect tipple to get you back on the ball after a killer hangover
A Jolly night out. The other week we were thirsty. Very thirsty. So we sponsored a night of eye scratching experimental music in a local space to where we brew. The deal was experimental music needs experimental beer and out last batch was truly an experimental beer. So what this meant was that all the punters got a free bottle of our 'on the bounce' pale ale.
Looks good eh? Decent carbonation, decent music, 20+ bottles of 5.5% grotty pale ale for free. Can't knock it.
Mad Dog So one of the bottles during bottling session we dumped a dried select chilli into the bottle and thought nothing of it. The bottle was marked as the 'mad dog' so we knew it was coming.
Have a butchers, So how was the Mad Dog? Fuck me it was heavy the heat over powered all taste, it was crazy. You needed to drink more on the bounce to quench the heat. Lovely!
Why on Earth is there a tin of Holsten Export there, explain yourself!? OK, well that wasn't our beer, other people are allowed to drink other beers. We say, your guts #democracy m7
Al right Alistair Campbell, that's all fine and dandy I'm glad you had a good night out and the Mad Dog was a spicy one. But you're skirting round the big question what did your Pale Ale taste like?
OK OK, some truths. It was a good beer for something we didn't think would work. A review from one of the Jolly Boys goes as follows and I'm not making this up...
"I've kept a bottle in a cupboard and just cracked it open. It's not a bad drop at all - a bit 'steely' and robust on the nose, dry with citrus notes and a hint of wet stone. Surprisingly fresh and clean - lovely. I found it quite dry, slightly watery/lagery mid-palette, not in a bad way, with minimal acidity and a mild carbonation that dissipates gradually - it keeps his head, mind. Lovely, barley lemon, bitter finish.
It's really nice (vaguely) contributing to making something that's nice to drink, so yeah, cheers guys. Hope you've had a nice weekend. Let's sort this Hideous Porter out next."
This was from one of many Jolly email exchanges we've had recently. I tend to agree. Decent carbonation, fresh and clean, subtle bitterness on the finish, refreshing drop.
So really a home brew success.
By the time I've finished this blog post we've already had another brew day, back to the Porter. Lads get ready!! Stay tuned for the next budget!

Second brew session aftermath
13th July 2014 was the second brewing session for the Jolly Boys.
Back to basics
Just like John Major once called for, the boys took our brewing back to basics. All gear sanitised and sterilised, recipe recalculated and readjusted to the scale, method planned out, and working prepared / environment ready. With blurry heads the Jolly Boys were up for the challenge we set.
This session was a lot more fun. We had a delayed start but it wouldn't stop the boys giving it a go, a few hours hard labour and we now have two very happy demi-johns of all grain Hideous Porter on the go. We also made it just in time to catch most of the World Cup final. oi oiiii
Cabinet reshuffle
Again there was a few mistakes, it was good to have all three heads around the table to plan and work out what was wrong like one of Blair's emergency cabinet meetings. A few gaps in our plan, we need more muslin bags, more hops, replace the run out sanitiser, and to be better with the hydrometer to get the gravity right. This time I've found a better location for the demi-johns to sit. My dark cupboard where I once stored the vacume is now home to our beer. As we were going along we made some emergency changes one was to opt for the fresher hops we'd got in for that session rather than the chilling older batch from last time.

Post brew emergency
Had a minor scare the day after brewing when demi-john A was starting to seep out of the air lock, but that's since calmed down. Just making sure the air lock is kept topped out with water and fingers cross that batch is not infected or anything that might make it more grotty than it will be. The second demi-john looks beautiful.
Improvements
Again we wasn't 100% on how much yeast to use / make. So we're going to be sought out experience from other home brewers / professionals / the internet. There's a few weeks till the next brew so loads of time. We want to get it right next time.
However there's a fear that reading too many different sources / online / offline will lead to conflicting ideas and making it harder to know what to do and lead to us struggling to agree on certain aspects. So all three of us are going to have a Jolly Boys catch up next week to plan out our next brew.
Next budget
Sunday 3rd August 2014, we're going to taste the Hideous Porter batch 1 if it's ready and then start brewing the Jolly Boys "M8ys Pale Ale". We'll be trying out a few new ideas we've got up our sleeves. Bit of research will go into designing this recipe so it's pretty exciting.
We're also planning to bottle the batch 1 Hideous Porter, so some new bottles and caps will be acquired soon.
