I pack everything in those disposable paper containers & leave it outside each senior citizens door. Once I leave I text them to take the food in. We don't see each other. I come home, wash my hands thoroughly, wipe down the elevator buttons, door handles with dettol. Simple. I hard boiled eggs & set aside I tempered oil with cloves, pepper corns, ginger-garlic pastes, onions & cashews. Once cool, I ground to a very smooth paste along with milk, fresh coriander, green chillies, mint, tamarind pulp & salt I tempered oil with black cardamom & cinnamon and & simmered the smooth paste till it thickened. That "Sister Ruby" Influenced Mixed Thali - Done My medical issues started when I lived in Bengaluru. I often needed to go to a hospital near my home & had to stay overnight for tests. The Head nurse called "Sister Ruby" was from Kerala & brought the most yummy smelling packed food with her! The staff used to swarm around the Nurse's station & one time since my room was close by & the noise disturbed me, I went to look. The look on everyone's faces was pure bliss as they were all eating her tiffin & she was looking like a proud Mother Hen. I was so tempted but wasn't well enough to eat. A few visits back to the hospital & I started chatting with her & I insisted on tasting her food. Today I made a couple of dishes inspired by her recipes 1. That Raw Banana Curry I cut off the top, bottom of raw bananas, keeping the peels on. I washed thoroughly several times to remove the stickiness I made a very smooth paste out of fresh coconut & water I pressure cooked the raw bananas for 2 whistles in salted water along with tomatoes, curry leaves, turmeric powder, red chilli powder, coriander powder & coconut oil. I added in coconut paste & simmered I tempered coconut oil with mustard seeds, dried red chillies, asafoetida, onions & added into the simmering curry along with more curry leaves 2. That Foofoo Bottle Gourd Masala I tempered oil with lots of garlic, onions & dry red chillies. I added lots of tomatoes, fresh coriander, dry fenugreek leaves/kasturi methi, red chilli powder, turmeric powder, salt & cooked bottle gourd/doodhi in this till done 3. That Soya Chicken Pepper Masala I marinated chicken in a mix of ginger-garlic pastes, lime juice, salt, fresh black pepper powder, garam masala powder & soya sauce I tempered sesame seed oil with curry leaves & onions. Once browned I added in tomatoes & once pulpy, I added in the marinated chicken & cooked till done 4. Those whole wheat parathas 5. That Freshly Steamed Rice Always take away something positive from dark times. When you are at your lowest, the only way is to look upwards. In my darkest times, I saw the light after eating Sister Ruby's food. I apply that to life now. Won't you?
