Susiyam - Crispy outside Yummy Inside
A popular dish across Kanyakumari district or in parts of Kerala. Made with chana dal, jaggery, and grated coconut, and coated with maida batter and deep fried until golden brown, susiyam is a popular snack or dessert made during festive occasions that is enjoyed by people across all age groups. Some say susiyam is not easy to make, but it is not. With the right ingredients and the right method, susiyam is one of the easiest desserts to make. Ingredients:
Water, ½ cup
Ghee, 1 teaspoon
Jaggery, 1 cup
Cardamom powder, 1 teaspoon
Water, 2 ½ cups
Chana dal/green gram1 cup

Rice flour, 14/ teaspoon
Oil for deep frying
Method:
Wash chana dal thoroughly and add 2 cups of water. Place it in a pressure cooker and cook on medium-low heat for 2 whistles.

Once the dal is done, in a pan, add the jagger and melt it by adding 3 to 4 tablespoons of water. 
Heat till the jaggery dissolves. Once it dissolves, strain it through a strainer and set it aside.
In a pan, add a teaspoon of ghee and roast the grated coconut till the moisture dries up. 
Add in the mushy dal and jaggery water and mix till the mixture thickens up. Once it thickens, add in the cardamom powder and switch it off. 
Once it cools down, make lemon-sized balls out of the mixture and place them on a plate.
Meanwhile, in a bowl, add the flour and water. Make it a smooth batter.
