Old classic Southern battered fried chicken🍗🍗🍗🍗 is my priority over KFC styled crunchy chicken fry😊. Southern fried chicken is prepared in quite a different way before frying and marinating the chicken pieces it is first soaked in buttermilk or brine solution. My personal opinion is to soak them in brine solution, for it makes your fried chicken very juicy and flavoursome however, if you are running late and you want to tenderise your chicken in least possible time then soak them in buttermilk for an hour. Southern Classic Battered Fried Chicken INGREDIENTS *2 kilogram chicken pieces cut into desired size. *2 tsp garlic paste *2 tsp black pepper powder *2 tsp paprika or you can add chilli powder if you wish. *1 cup all purpose flour. *1-1/2 tsp MSG (optional) *I add 1/3 cup sesame seeds in my batter for added crunch,you can skip that out if you want. *Oil for deep frying PROCEDURE 1- Put the chicken pieces in a bowl.Cover the chicken pieces in very salty water enough for the pieces to soak, this salty water is known as brine solution. Cover the bowl with chicken pieces using a cling film or a lid and put it in the fridge for 6-8 hours. 2- After the soaking period, drain the chicken pieces properly from the brine solution and dry the chicken pieces completely using a kitchen towel. 3- Mix the chicken with garlic and pepper. Meanwhile heat oil in a pan or in the deep fryer. Mix flour, sesame seeds, paprika, MSG and a little amount of salt. Add water with the flour and the spice mix to make a medium thick batter. 4- Deep the chicken pieces in the batter and fry them in medium flame till the colour turns golden brown. 5- After frying the fried chicken put them in a kitchen towel to get rid of excess oil. Serve the fried chicken with your favourite dip and ENJOY ☺️☺️.
