Barbecue sauce (also abbreviated as BBQ sauce) is a sauce used as a marinade, basting, condiment, or topping for meat cooked in the barbecue cooking style, including pork or beef ribs and chicken. It is a ubiquitous condiment in the Southern United States and is used on many other foods as well.[1]
Ingredients vary, but most include vinegar or tomato paste (or a combination) as a base, as well as liquid smoke, onion powder, spices such as mustard and black pepper, and sweeteners such as sugar or molasses
Some place the origin of barbecue sauce at the formation of the first American colonies in the 17th century.[2] References to the sauce start occurring in both English and French literature over the next two hundred years. South Carolina mustard sauce, a type of barbecue sauce, can be traced to German settlers in the 18th century.[3]
Early homemade barbecue sauces were made with vinegar, salt, and pepper. Sugar, ketchup, and Worcestershire sauce started to be used in the 1920s, but after World War II, the quantity of sugar and the number of ingredients increased dramatically.[4]
The Georgia Barbecue Sauce Company of Atlanta advertised an early commercially produced barbecue sauce in 1909.[5] Heinz was the first major company to sell bottled barbecue sauce in 1940. Soon afterward, General Foods introduced "Open Pit." Kraft Foods only entered the market in around 1960, but with heavy advertising, succeeded in becoming the market leader.[4] Kraft also started making cooking oils with bags of spice attached, supplying another market entrance of barbecue sauce.[6]
Different geographical regions have allegiances to their particular styles and variations of barbecue sauce.
East Carolina – Most American barbecue sauces can trace their roots to a sauce common in the eastern regions of North Carolina and South Carolina.[3] The simplest and the earliest, it was popularized by enslaved Africans who also advanced the development of American barbecue, and originally was made with vinegar, ground black pepper, and hot chili pepper flakes. It is used as a "mopping" sauce to baste the meat while it is cooking and as a dipping sauce when it is served. "Thin, spicy, and vinegar based," it penetrates the meat and cuts the fats in the mouth, with a noticeably tarter flavor than most other barbecue sauces.[7]
Western Carolina – In Lexington and the Piedmont areas of western North Carolina, the sauce is often called a dip. It is similar to the East Carolina Sauce with the addition of tomato paste, tomato sauce, or ketchup.[8]
South Carolina mustard sauce – Part of South Carolina is known for its yellow barbecue sauces made primarily of yellow mustard, vinegar, sugar and spices. This sauce is most common in a belt from Columbia to Charleston.
Memphis – Similar to the Western Carolina style, but using molasses as a sweetener and with additional spices. It is usually served as a dipping sauce, as Memphis-style barbecue is typically a dry rub.[9]
Kansas City – Thick, reddish-brown, tomato-based, and made with sugar, vinegar, and spices. It evolved from the Western Carolina and Memphis style sauces but is thicker and sweeter and does not penetrate the meat as much as it sits on the surface. Typical commercial barbecue sauce is based on the Kansas City style.[9]
Texas – In some of the older, more traditional restaurants, the sauces are heavily seasoned with cumin, chili peppers or chili powder, black pepper, and fresh onion, while using less tomato and sugar. They are medium thick and often resemble a thin tomato soup.[10] They penetrate the meat easily rather than sit on top. Bottled barbecue sauces from Texas are often different from those used in the same restaurants because they do not contain meat drippings.[11]
Alabama white sauce – North Alabama is known for its distinctive white sauce, a mayonnaise-based sauce that also includes apple cider vinegar, sugar, salt, and black pepper, which is used predominantly on chicken and pork.[12]

The Dragon's Hot Chicky Sando
Over the last several years I've been following the 'hot' fried chicken sandwich explosion and have tried several different versions. I've got some observations I feel compelled to share with you. I hasten to say that these are personal opinions, the perfect hot fried chicken sandwich may still be out there somewhere. Like regional BBQ preferences, fried chicken aficionados can be quite fierce in defending their favorites, so I'm being careful about being too partisan. The herbs and spices came through nicely in all the 'no heat' versions. The herbs and spices were much less apparent in the 'medium hot' versions and were absolutely eclipsed by the dried peppers in the hottest versions. This insistence on 'heat for the sake of heat' is troubling to me; it's so one dimensional, a lip blistering approach that leads me to ask 'where's the flavor'? Textures varied from juicy to dry and stringy and I said to myself that there must be a way to incorporate the full flavors of my hot sauces into a fried chicken sandwich...did you see that coming?  Katie and I got to work in the kitchen in search of the best hot chicken sandwich recipe. We set up a frying station and did some method and flavor testing using various coatings, sauces and rolls. Sliders turned out to be the best presentation method. We had a brief squabble about the necessity of pickles (I'm an advocate of half sour on the side, Katie insisted that the pickle crunch was essential in the sandwich). Brioche rolls are susceptible to sogginess: beware. Small ciabattas were a great choice.
Now, without making a 'best fried chicken' pronouncement, I'll outline one of the most flavorful and juicy methods we came up with:
Cut a boneless roasting chicken breast into 1/2 inch slices (should give you a nice oval slice)
Dust with your favorite dry rub/spice blend. We're partial to Misfits Spices, one of our farmers market buddies, their Sweet Heat is killer and look for their new reaper blend if you find them in person and pain is your game
Coat with your favorite Dragon's Blood Elixir and spread a couple of tablespoons of plain Greek yogurt over the top, turn several times to coat and refrigerate for a couple of hours (the yogurt will act like buttermilk and give you a tender texture- very tandoor-ish)
Take the refrigerated cutlet and dredge in seasoned flour or seasoned cornmeal (or a combination)
Fry at 350 degrees until brown and crispy (we did a shallow fry in peanut oil- about 3 minutes on a side)
Drain on paper towels and serve quickly to keep the crunch, slather on more hot sauce!
Voila! Flavor, heat and a savory crunch. The experiment was very satisfying, but I think my cholesterol level has risen a bit.

But I am not someone who’ll get convinced that some food is better without tasting it. So I decided to visit Buffalo Wild Wings to find out- Do they really serve the best wings? The first impression of their store was good. It was spacious with grey and yellow themed decor. I was really confused about what to order because of numerous option for wings and condiments available on the menu. I finally decided to order 6 boneless wings of each flavor from the menu. Their staff treated me very well and offered me free drinks under special offer with my meal. After waiting for around 5-7 minutes, I recieved the order on my table. I got the Honey BBQ Wings, Spicy Garlic Wings, Jammin Jalapeno, Asian Zing, Mango Habanero, Caribbean Jerk, Salt & Vinegar, Desert Heat, Chipotle BBQ, Lemon Pepper, Garlic Parmesan, Original Buffalo, Buffalo Dry, Teriyaki and Smoky Adobo. All of the wings tasted fantastic, but I’ve summed it up in a table below to tell you how each and every chicken wing tasted. Of course, I couldn’t eat all of them, and there were many wings that I couldn’t try. So I packed them all and took them home with me. My favorite menu item? I would definitely choose the Garlic Parmesan Wings or Buffalo Dry Wings with some leftover Teriyaki sauce and ranch. I generally felt like Buffalo Wings wings is a perfect place for those who love chicken wings. I won’t say it is the best because there is no such thing as best. Each place has its own specialty and Buffalo Wild Wings really nailed it for chicken wings. There are other cuisines as well that I didn’t try but you can try them for sure.
