IS IT A PAPPADAM OR AN APPALAM?

What is the proper name for the skinny and crispy Appalam Snack that's served with Indian meals? The solution depends on where you reside.

If you're in Kerala, you call it a Pappadam. If you’re in Tamil Nadu you call it anbhu appalam in Madurai, If you're in north India, you may call it a Papad. Other states call this tasty treat by even other names!

Usually served with the meal (like potato chips would be served within the U.S.) they're also served as a starter or appetizer. Anbhu the best appalam brand in Madurai usually made up of lentil flour like urud dal and chickpeas or rice with oil, salt and maybe bicarbonate of soda to create them light. Some are plain while others are flavored.

In North India, Pappadams or Papads, are made with urad dal and sometimes with other primary ingredients. Often they're spiced with coarsely ground black pepper, cumin seeds or red chili flakes. they're the medium tan ones that you just possibly have tried in Indian restaurants. These are often fried, roasted and microwaved but i've got to be honest that roasting or microwaving leaves them with a raw smell so don’t even try it. When these cook in hot oil, they “puff up” or curl after they are done. They need a fragile crunch and are absolutely delicious.

After we had the concept to jot down about appalam for this blog entry, we assumed for a second about a way to get the props for the photograph. Would we have got to drive to the shop and buy several different packages of Pappadams? We dreaded this idea because there's most food in our households that we couldn’t bear to buy more only for some minutes of taking pictures. Once we opened the refrigerator to create lunch, we remembered that we had some packages within the bottom drawer. A chance discussion about Sesame with @bhask_96 unearthed quite a bit of insights for me. Sesamum indicum is native to North West parts of Indian subcontinent & is one of the oldest oil crops cultivated in the world with some of the highest oil content in all seeds. Ironically it is barely used in that region now. Sesame oil was supposedly exported by Harappan civilization to Mesopotamia where it was called ilu in Sumerian & Ellu in Arcadian derived from the Dravidian word. No wonder sesame oil is still used widely in South India except for the west coast called Nallennai or Ellennai in Tamil & gingelly oil in English derived from the Spanish word genjoli for sesame. I am no archaeologist but this does go along with Harappans being Dravidians theory . There is still a Dravidian language called Brahui which is spoken in Balochistan. Gingelly oil is typically of a golden color due to the particular roast of sesame . It is traditionally used to make Chitranna which means mixed rice in Kannada which includes a few variants of which I feel Nimbekayi is the most popular. You would see a lot of people eating steaming chitranna in Darshinis in Bangalore for breakfast. It uses a typical tempering mix called Oggarane or Gojju in which mustard seeds, curry leaves, urad & channa dal, asafoetida, chopped ginger & green chillies go into it. This season is common to other variety rices like Thayir Sadam , Puliogare or Kobbari Annam as well . In lemon rice , turmeric is added to the seasoning for the characteristic yellow hue & squeezed half a lemon after rice was tossed into . I also toasted some peanuts & cashews for more proteins & added some chopped cilantro into the rice after taking it off the stove. The only thing you need to have along with this is Maravalli Kizhangu Appalam. It has a characteristic check pattern because of the Tapioca dough being dried on a traditional panayola pai ( palmyra leaf carpet) & a sweet flavor which really goes along with this. We also had made a snake gourd koottu which frankly was unnecessary even though delicious. Lemon rice stays fine even for days in hot summers .
