One of my favorite cookies is the Armenian khourabia (various spellings). This simple shortbread cookie is made all over the Middle East, and it’s main ingredients are pretty much the same: clarified butter, sugar and flour. We used to make clarified butter (AKA ghee) but now @fourthandheart’s Ghee {#AD} takes the work out of preparing it ourselves. It’s a 1:1 butter replacement and is great for baking or using in high heat cooking with its 485° smoke point! Wanna learn more about @fourthandheart, check out the link in my bio. Khourabia 1/2 pound @fourthandheart ghee 1 c superfine sugar 2 cups flour 2 t vanilla or almond extract (optional and can use any combination of the 2 for added flavor) 30 shelled pistachios or blanched almonds (optional) Powered sugar for dusting (optional) Cream butter and sugar until fluffy, light and pale in color. Add extract/s if using and mix until combined. Add flour and mix until combined. Take about a walnut sized amount of dough and roll into ball, place cookie sheet and push down slightly and place nut in center. Bake at 300 for 20-25 mins. Cookie should remain pale. (Do not brown!)
