Five fun things to know about Chef Louis... 1. He was born on a train in Hungary in 1919. 2. He majored in psychology in college. 3. He immigrated to the US in the early 1950s with only $1 in his pocket and no understanding of the English language. 4. Ten years later he opened The Bakery, one of Chicago’s most popular restaurants which enjoyed a 25 year run from the 1960s-1980s. 5. He had a BIG personality. In addition to cooking and running the restaurant, he was also a syndicated newspaper columnist, a bestselling author and a frequent guest on television shows (including Oprah!) 🍳 All that aside, he believed in the joy of cooking and having a good time in the kitchen. In 1971, he published The Chef’s Secret Cook Book on the belief that tips, tricks and secrets of classically trained chefs should be shared with everyone - most importantly home cooks - so that every meal could be prepared successfully each time. 👏 Every recipe in this 288 page cookbook contains notes, advice, tips, and suggestions on how to execute each dish based on his 40 + years of knowledge and hands-on experience in the professional culinary industry. In 1974, this was how you took a masterclass in cooking! Except you just didn’t have one extraordinary instructor - you had 11! And they were all experts in the industry in slightly different ways. Featuring everything from canapés to baking, seafood to wild game, wine to veggies, breads to pasta dishes, this was the dream team that taught America to cook in the later half of the 20th century. In 1969, Corningware debuted their Floral Bouquet pattern which eventually would contain three different styles of yellow floral designs. This simple line drawing pattern, the third in the series, came out in 1971. Containing just four colors (yellow, green, blue and white) it was delicate and free-spirited, capturing the flower power aesthetic of the early 1970s. Discontinued in 1974, this is a super fun pattern to collect since it had a limited run thus making it harder to find vintage pieces now. There is lots to love about vintage corningware but this one in particular might be my most favorite pattern yet! Sometimes just one is all you need:) 👩‍🍳 In this case it’s Betty. Not the famous Betty Crocker of colorful vintage kitchen fame. But instead Betty Wason, the former war correspondent who turned to cookbook writing after experiencing gender discrimination in the 1940’s. It is true that Betty Wason may not be as well known as Betty C., but she’s an absolute favorite here in the Vintage Kitchen. ⭐️ A curious cook and researcher, Betty brings a flair to cookbook writing that is authentic, practical, generous and filled with engaging information she learned first hand while traveling the globe. As a working woman her entire life, she did not succumb to the ideas that homecooks should be marginalized. The kitchen was not a place for unpleasantries. Cooking meant joy and discovery and community to Betty, so she focused her book on international meals, heirloom recipes and reliable favorites that sparked joy and creativity and festivity. In other words... good food made with good ingredients for good-time people. Here in 900 pages of her Everything Cookbook, she shares “not just a book crammed full of recipes, but the essence of knowledge gained during a lifetime of cooking and enjoying it.” Betty could have turned bitter after her journalism career was cut short but instead she refocused on what she new and loved and lived best... writing, travel and cooking. And thank goodness for that. She went on to publish 15 cookbooks throughout her life. This one is by far the biggest of the batch and some could argue the most impressive, but really every single one of Betty’s cookbooks are fantastic. In the 1960's in a remote valley in Southern California, the first Zen spiritual center opened in the United States. The only zen monastery outside of Asia, it was known as Tassajara. There, students and guests from all over the world came to practice Zen philosophies and Buddhist principles in order to gain a more gentle approach to life. One that focused heavily on kindness, compassion and thoughtfulness. Due to its remote location, food for the guests, students and staff were grown on-site at Green Gulch Farm, part of the Zen Mountain Center campus. In 1973, Edward Espe Brown published a book of Tassajara's vegetarian recipes, which takes readers on a 256 page journey regarding all things vegetables. The appropriate equipment to use, ways to cook and enjoy a vegetarian diet, tips learned throughout years of culinary exploration, as well as stories about Tassajara and how the food factored in there, are all included. Since most of the vegetables were grown on-site, this is a great reference for not only vegetable lovers, but also home gardeners, as the vegetables included here are ones commonly found or easily grown in American garden plots. Many of the recipes though contain hints of Indian, Japanese, and South American cuisine, so its a great mix of accessible ingredients with exotic culinary flair. Containing no meat or fish, this cookbook does include dairy, egg and nut recipes. Beginners will love this it for it's detailed instruction and approachable language, while more advanced cooks will appreciate unique flavor pairings and ingredient combinations.
