Chai latte cake

Based on this chamomile tea cake.

These ingredients fill a rectangular loaf pan ca. 23×13×5cm or any other pan of similar volume.

Batter:

2tbsp / 6g / 4-6 bags of crushed chai

115g butter

240ml milk

200g sugar

1/2 tsp salt

2 large eggs

1 tsp vanilla extract

2 tsp baking powder

192g flour

Melt the butter in a saucepan, mix with 50% of the tea; stir. Transfer into a big bowl, and leave to steep and cool for 1h.

Using the same saucepan, simmer the milk. Remove from heat, and stir the other 50% of the tea in. Also let cool for 1h.

Preheat oven to 180C, and prepare pan.

Big bowl: add sugar and salt to the infused butter; whisk until smooth. Add the eggs individually, and whisk between each egg. Add baking powder and vanilla; whisk. Add flour and infused milk while whisking.

Transfer the batter to the pan. Bake 40-45min; let cool for at least 30min.

Mascarpone cream icing:

100g cream

50g powdered sugar

250g mascarpone cream cheese

Add cream and powdered sugar into a big bowl. Mix using an electric mixer on max speed (mind the splash) until the cream begins to thicken (whipped cream), but don't overdo it.

Add mascarpone, mix until smooth.

Wait until the cake has cooled completely before applying the icing.

192g (1c) white sugar

1tsp baking powder

3c all-purpose flour

1/4tsp salt

zest of 1 lemon

1/2c cold butter

1 large egg

4-5 cups mulberries ((i used 4.5c))

2tb lemon juice

1/3c white sugar

2tb all-purpose flour

preheat the oven to 375

whisk together sugar, baking powder, flour ((the 3c)), salt, & zest

cut in butter with the back of a fork until the mixture is crumbly

add egg & yogurt, & cut in the same way

divide the dough roughly in half

press half the mixture in the bottom of a greased 9x13 pan

bake 10min

gently stir together the remaining ingredients

spread the berry mixture over the warm crust, then crumble the remaining dough over the top

bake for ~30min, or until the top crust begins to brown

cool fully before slicing

i found it was easiest to cut off the mulberry stems using the fingernail of my thumb pressed against the side of my forefinger to pinch them off. and i used this recipe, with some changes :)

Foodie sanguine: mochi ice cream increasingly abstracted from cheesecake

A while back I bought mochi ice cream (actually fruit sorbet) and I must have been having some real nutrient deficiency because they're nearly half their weight in sugar. So they've just been languishing in the freezer and actually melted into a slab when someone left the freezer door open. But I found a use for them (and the too sweet biscuits I bought the other day.)

This is a modification of this recipe. But there's no eggs in this mochi version, so it's incidentally vegan.

Ingredients

6 balls of mochi ice cream or sorbet ≈192g 6¾oz (I used berry sorbet with no dairy)

250ml 8½ oz coconut cream (NOT coconut milk, coconut cream. Also don't use the organic stuff.)

250ml 8½ oz vegan whipping cream

60g 2oz flour

200g 7oz / 10ish oat biscuits

50g 1¾ oz butter

Pinch of salt

Optional: 50g 1¾ oz flour

Method

Preheat the oven as high as it'll go.

Crumble up the oat biscuits and mix with butter. (1)

Spread your biscuit mixture out in a cake pan lined with foil or baking paper. Bake in the oven for 10 ish minutes. (2)

Remove the cake pan from the oven and leave to cool while you work on the cheesecake batter.

Add the mochi ice cream to a mixing bowl and melt in the microwave. (3)

Add the mochi, coconut cream, salt, and 60g flour to a blender, and blend until smooth. (4)

Pour the mochi mixture back to the mixing bowl and stir in the whipping cream. Make sure it's fully incorporated.

Preheat the oven to 160°C.

Place the cake pan with the biscuit base into a larger baking pan that will serve as the water bath (5), then slowly pour the cheesecake batter into the cake pan. (6)

Put the baking tray with the water bath and the cake pan into the oven for 55 minutes, or until there's a slight wobble in the centre of the cheesecake.

Leave the oven door cracked so the cheesecake can cool for at least 30 minutes before putting it in the fridge to set. Preferably overnight but for at least 6 hours.

Enjoy.

Notes

Alternatively, you can mix 50g flour with the butter so that it's like crumble/streusel topping and mix that with the crushed oat biscuits, but that's optional.

I used a 20cm 8 inch pan for this.

Mine were already partially melted so I don't know how long it'll take, but you want the mochi to be soupy, but not like, boiling.

I suppose you could do this a hand mixer/whisk but you might end up with unincorporated mochi dough.

The original recipe link has a diagram showing how to construct a water bath even if you don't have water tight cake pans.

I actually spooned it in, because playing it in all at once scattered my base one time.

180g (1.5c) all-purpose flour

preheat the oven to 350F

whisk together sugar, yogurt, butter, eggs, lemon zest, lemon juice, & vanilla in a large bowl

in small bowl, whisk the flour, baking powder, & salt

add the berries to the dry ingredients & mix until they are coated with the dry mixture ((this keeps them from sinking in the batter))

add the drys to the wets, folding until just combined

pour in a loaf pan ((or several --- i used 3 mini loaf pans, 1.5c batter in each)) & bake for 55-65min, or until a toothpick comes out cleanly

let the loaf/loave cool for 15min before removing to cool fully on a rack

i used this recipe as a base, & trimmed all the stems off the berries before starting using my thumbnail
