Made it home after the flight from hell. I accidentally took a cab to the wrong airport, missed my flight, and the next soonest flight out was the next day so I spent the night in the airport.

My linden honey mead No.051524 survived the trip with some very minor leaks. I knew it wasn't 100% done fermenting but close enough to done that I wasn't worried about sealing it in bottles for a little while. No disasters occurred. One bottle did leak a tiny bit, but that was less too do with fermentation CO2 pressure build up, and more to do with the fact that It was a honey jar with a metal lid that wasn't quite as airtight as the lids/corks on the other bottles I was able to pack. Just a tiny wet spot on the packing paper I wrapped it in. No damage to the items in my suitcase.

I finally got a hydrometer reading on it (I forgot to bring my hydrometer with on my trip) and it's not quite dry yet, but the D-47 yeast I used is taking a long time to ferment that last tiny bit of honey so I added a little EC-1118 yeast to finish it off. I didn't rehydrate it properly first. Hopefully it still gets going.

I'm pretty sure I left my wine thief (which is actually a stainless steel turkey baster I am using as a wine thief) at my sister's house. Oops.

The rubber stopper on my blackberry honey mead No.011324 was ajar when I returned. I tasted it. It doesn't have that wet cardboard taste that comes from oxygenation, but it doesn't taste good either. I bottled it in any case. I'll try it in a couple months and see if it tastes better or worse.

I racked my silver needle tea mead No.032324 to narrow mouth containers to age. Didn't taste it. It still less than 3 months old.

First official bottling! I'm usually much more laissez-faire about how I store my mead, but these are going to Mead Stampede to be judged, so I had to bottle them properly according to the competition guidelines.

The three on the left are an experimental cactus blossom honey mead/purple "Forbidden" rice wine blend. I want to say it tastes a bit like a cross between a chardonnay and a pale ale. I think it turned out well for what it is. It's not my personal flavor preference, but it tastes the way it's supposed to taste.

The three on the right are my hōjicha tea mead with Sierra Nevada Mts. wildflower honey. This is my 2nd time making this mead, and my favorite mead that I've ever made. The tea gives it a smoky umami barbecue flavor. It needs to age a bit more. I think (hope) the couple months until the competition day will be enough time to get it tasting the way I want.

I ended up not doing any acid additions or other flavor/texture alterations, besides force-carbonating the experimental batch. I learned the hard way never to try to siphon after carbonating. Made a bit of a mess. Lost about a third cup of liquid (which doesn't sound like a lot of liquid but makes a much larger mess when that liquid turns to foam).

The corking was a huge pain. I bought a cheap corker. It was hard getting it to hit the cork dead center. I had to remove two corks and re-do them. Conversely, the black pvc heatshrink caps were very easy to seal on with a hair dryer.
