Once upon a time I used to do Digital Art, and also for a brief quarantine-induced period I was a Pixel Artist (this was my version of a spring 2020 baking bread from scratch phase lol)

vegan cheesecake recipe:

~ 200g dark chocolate (or a dairy free milk I suppose)

~350g soft tofu

~ on tablespoon or so, maybe less coconut oil (or some kind of vegan butter replacement)

~125 dairy-free biscuit (graham cracker consistency)

you will need a cake tin, preferably spring-form. you will also need baking paper.

line your cake tin with baking paper to make it easy to get the cake out later.

crush the biscuits into a fine crumb and use the coconut oil (or whatever) to pinch the crumb together. smoosh it in your cake tin and pop it in the fridge. it is your standard cheesecake crust.

melt the chocolate. blend the tofu until it is a fine liquidy liquid. mix 'em up together until it is smooth and the colour is uniform.

pour the mixture into the pie crust. pop it in the fridge for a few hours, it is better when it gets to sit for a day or two.

if you do this with regular milk chocolate instead, it really tastes like cheesecake.

I see you know about gluten free desserts, do you have any good dairy (milk specifically) free cookie recipes? Specifically chocolate chip? (any other desert is alright too... I just miss deserts)

So you can make the tollhouse chocolate chip cookie recipe (just search "tollhouse chocolate chip cookie recipe", it's the one ontheback of the bag) with vegetable shortening instead of butter and you can use Njoy chocolate chips and you should have a tasty, crispy, dairy-free chocolate chip cookie.

Also look up 3-ingredient peanut butter cookies, the only ingredients are eggs, peanut butter, and sugar.

You can also make pie pastry with shortening and then make a berry or cherry filling with fruit, water, sugar, lemon juice, and starch for a fully vegan dessert.

And for something different, look up how to make mango sticky rice, which is a Thai dessert made with rice, coconut milk, sugar, and mango.
