Koreans are right. Lots of tiny side dishes are The Way.
#Look I cannot fill up on a main dish (especially if it’s a meat dish) even if I eat until I want to throw up#It doesn’t fill in the edges - I still feel hungry in some horrible way and end up snacking incessantly#But if I add a few different side dishes (cucumber kimchi or coleslaw or raita or pickles or sauerkraut or sliced veggies with vinegar…#Whatever I can gather from my limited resources)#suddenly I am not hungry any more not even a little bit#And if i add rice as well then i can go the whole day on two meals#(I tend to eat anywhere from 5-8 times a day so 2 meals a day is absolutely revolutionary for me)

Recipe for Kimchi Mac and Cheese The next-best Thanksgiving side dish is kimchi mac and cheese, which is simple to prepare for a large group if you have extra kimchi. 1/2 pound shredded Monterey Jack cheese, 1 pound grated Cheddar cheese, 1 package elbow macaroni, 1.5 cups panko bread crumbs, 5.5 cubes whole milk, 6 cups chopped kimchi squeezed dry, salt and ground black pepper to taste, 1/2 cup all-purpose flour, 6 tablespoons butter divided

Sigeumchi-Namul/Korean-seasoned Spinach is so damn good and I really need to just start making some and leaving it in the fridge to eat through the week, cause it's so low-spoon and keeps well and is delicious cold~
Just blanch some spinach (boil for 30s-1m minutes then rinse in ice cold water or run under cold water tap), press the excess water out of it (either squeeze it with your hands or find some good weight to press it with. I'm thinking leave the spinch in a strainer in the sink and put a glass bowl full of water on top of it but i haven't tried yet). You might want to bunch it into a cube and chop it a few times (the amount of chops depending on how big a batch you've cooked).
Then season it with soy sauce (or coconut aminos and maybe add salt if soy-free), toasted sesame oil, toasted sesame seeds, minced garlic, chopped green onion, and, optionally, add some gochugaru (Korean red pepper flakes) or silgochu (shredded Korean red pepper) if you want some heat. Even regular black pepper is good in it if you don't like the spicy pepper heat.
I haven't tried, but it probably works well with frozen spinach too, just thaw it according to directions and then season as above. Probably takes longer to thaw than cook, but easier on clean up that way.
The amount of seasoning will depend on how big a batch you make, but start low then add more. Sesame oil is strongly flavored so start with a tsp. Maybe about .25 more soy sauce than sesame oil, but your taste will vary. It should taste nutty from the sesame oil and a bit salty.

I think it was watercress namul last time we visited her)#(She's made it out of wild greens she's picked before it was one of the first things i ever ate that she made and it was so damn good)#(I bet you could make it out of like. Dandelion greens if you wanted.)

yeonjun was laying on your bed, one hand underneath his head and the other holding his phone. you were writing, one headphone in your ear and the other dangling loosely. well, you were almost finished with your homework.
your boyfriend was patiently waiting for you to finish up so later you could cuddle and go on a walk. it was something that made your heart melt. yeonjun could simply arrive at your place later when you’re done with your homework or go to the living room and watch tv. but instead, even though you weren’t taking, he stayed in the room. you could feel his presence, sometimes he even giggled at some memes he saw. you love him so much.
and it’s just that he’s beautiful inside and out. closing your text book quietly, you turned around on your chair to take a look at him. to simply admire your boyfriend.
because he was an literal angel. kind, loving, caring. his stubbornness and ambition inspired you every day. regarding his physical appearance, there wasn’t even a tiny bit of him you wouldn’t love.
his pretty face, kissable lips, strong arms, long legs (that made you sometimes jog up to him because he’s just a fast walker) and toned body. you especially loves his soft hair (well to be specific, you loved playing with them).
“what?”
his amused voice made you come back to reality, realising you were staring at him. due to his outstretched hand his t-shirt rode up a bit, revealing his stomach. and you felt a sudden urge to pepper it with kisses.
you stood up, dramatically stretching to think about your attack plan. yeonjun watched you amused, a smirk on his lips.
“i know i’m handsome, baby. but just come here already” he whined, putting his phone away.
“okay, okay” you murmured and sat on the edge of the bed. and while he looked at you confused, pout on his lips, you quickly grabbed the hem of his shirt and pulled it up a bit.
“yah–!” yeonjun gasped, his hand moving from under his head.
you giggled and quickly moved onto his lap, attacking his stomach with kisses. pecking random places, giggling between them.
“what are you–?” your boyfriend breathed out, stunned by your actions.
“mwah!” you chuckled and pulled away when you had to catch a breath. looking at flabbergasted yeonjun you laughed again. his face was bright pink, almost as his iconic noona hair.
“y/n, you’re actually insane” he exhaled shakily, his hand reaching to tuck a strand of your hair behind your ear.
“no, not really. i just love you” you scoffed, pulling his shirt down “and sometimes i feel like i’m gonna explode if i don’t cover you in kisses”
“i don’t mind, really” he hummed, a boyish glint in his eyes “but i’d rather you kissed my face…”
“oh really? will do then. whatever my jjunie wants~!” you cooed and cupped his face, pepper-kissing it everywhere. this time yeonjun started giggling with you, the feeling a bit ticklish.
his forehead that scrunches when he’s confused, his perfectly shaped nose, his squishy cheeks, his sharp jaw, his eyelids that are perfect to put eyeshadow on, his cute chin.
with a smirk you kissed a corner of his mouth, only to pull away short after. yeonjun didn’t let you though, chasing you.
“you’re a meanie” he grunted, pulling your hands down from his face
“mhm” you murmured and let him kiss you. pillowy lips moving against you, causing you to hum in delight.
yeonjun pulled you closer (however that was possible), now his hands on your face. you smiled into the kiss and leaned away.
“but you love me?” you teasingly rose your eyebrow and he let out an airy laugh, flipping you over so now you were laying down next to him.
“i guess” he giggled, wrapping his arms around you and caging you in a bear hug so you wouldn’t notice his red neck.
“asshole” your grunt was muffled because of his arm but you both knew the real answer.

Got chicken waffle bc been a while
#Crane game Not obnoxiously loud this time So guess they adjusted it#personalice#usually get the ‘nugget’ kind but surprisingly cheaper#I gues it’s not like the chicken is a huge price#piece* tho I guess also bc the nugget ver is marinated in sauce instead of on the side#and like basil)? tho is usually ask to leave it off#tho had fried chicken last night too so maybe inshiudkve gotten like beef fried rice#tho usually I go to another Chinese place if I want beef/brcooli#they have kimchi fries but idk if they have some ones without it#wlel the too#tempura I got once did come with a side of fries#but wouldn’t be surprised if they didn’t have plain ones on their own#so#they could make more off the meals#if#it was beef and fries without the kimchi it wouldn’t be so bad#but it basically costs the same as the beef noodle dish so maybe it’s a huger portion than I expect

(i ate jajangmyeon for lunch today and) it got me wondering what's linda's favorite korean dish. the entire park-west family's even.
#she definitely has kimchi in the household though because she's a child of both korean parents so#the twins favorite is probably napa cabbage because it's like tasty and the veggie itself doesn't taste much#therefore it tastes like the kimchi's spice mixture itself#linda has refined palate (beside being third generation korean of course) so her favorite is probably radish kimchi#(the twins taste it and they think it's a bit 'spicy' (not the mixture! the veggie) but linda sure they'll grow liking it in the future)#and also perilla leaves kimchi!#as for wally i think he'll eat whichever kimchi is in front of him or what linda eats at the moment#for street foods. the twins adore hotteok#they'll wake linda up on the weekend so she can help them making these pancakes#wally will deal if they run through their house because they're high on sugar later on#(wow this only street food and not yet favorite main dishes and side dishes and it's already so long)#(okay so far this is it)#park-west family.zip
