Chives, scientific name Allium schoenoprasum, is an edible species of the genus Allium. Its close relatives include the garlic, shallot, leek, scallion, and Chinese onion.

Thiosufonates such as diallyl disulfide, diallyl trisulfide, and allyl propyl disulfide convert to allicin by the enzymatic reaction when its leaves disrupted (crushing, cutting, etc.). Laboratory studies show that allicin reduces cholesterol production by inhibiting the HMG-CoA reductase enzyme in the liver cells.
