Homemade Hot Fudge

July in Minnesota means humidity, lots of flying bugs, and…I can’t think of a third. My pregnancy sweet tooth is horrible this summer and now that I have a house with a huge porch, my summer plans consist of sitting on the porch, eating ice cream, and watching the world go by.

I don’t make homemade hot fudge very often because I typically don’t eat enough of it to justify a batch. It’s different now because all this baby wants is sugar. Luckily, homemade hot fudge is not difficult to make but it does require patience. The melting, waiting, simmering, cooling, and all that jazz.

There are so many different hot fudge recipes, and you probably have your own go-to version that you’ve been using for years. My issue with 99% of them is that it requires corn syrup of some sort and I don’t like that. It leaves this slightly bitter and dry aftertaste – it becomes so much more noticeable depending on quality of the ice cream you use too. What I use instead is golden sugar cane syrup, specifically made by Lyle’s. It’s magical and it creates the smooth, gooey dream that is hot fudge.
