Instant Pot Chicken Fricassee

200 grams (4 slices) bacon, cut into thin 1/4" pieces
8 pieces skin on / bone in chicken thighs (around 2-2.5 lbs)
1 medium yellow (cooking) onion, finely chopped
2 stalkes celery, trimmed and finely chopped
2 medium carrots, trimmed and chopped
250 grams (1/2 lbs) button or cremini mushrooms, sliced
2 tbsp all-purpose flour
2/3 cup dry white wine
4 cups (1 litre) chicken broth
454 grams (1 lbs) baby potatoes, halved if large
4 sprigs fresh thyme (1 tsp dried)
1 dried bay leaf
4 sprigs fresh parsely (1 tsp dried)
2 tbsp lemon juice
1/2 tsp kosher salt, divided
1 tsp black pepper, divided
1/4 cup heavy (whipping) cream
2 large egg yolkes
Instructions 1. Set Instant Pot* to Sauté and after a couple of minutes add bacon. Let cook until bacon is just starting to crisp, about 3-4 minutes. Remove bacon from Instant Pot.
2.Season chicken all over with 1/4 tsp of salt and 1/2 tsp of pepper. Add to IP* and cook until browned on both sides, about 4 minutes per side. (This should be done in 2 batches to prevent the chicken from crowding). Remove and set aside.
3.Add onion, celery, carrots, and mushrooms to IP. Season with remaining 1/4 tsp of salt and 1/2 of pepper. Cook, stirring after a few minutes until mushrooms are starting to brown. Around, 5-7 minutes.
4.Sprinkle flour over vegetables and mix to coat. Very slowly (1 tbsp for the first couple of additions) add wine while stirring the entire time. Turn IP off.
5.Add broth, potatoes, thyme, bay leaf, parsley, lemon juice to the IP. Return bacon and chicken to the IP (being sure not to go over the max PC line).
6.Close the lid to the IP, ensure the valve is set to "sealed", and cook at high pressure for 10 minutes.
7.Manually release the valve to venting (carefully). Carefully open the lid and turn the IP back to Sauté. Whisk cream and egg yolks together in a small bowl or measuring cup and slowly add a tiny bit of broth from the IP while whisking the entire time to temper the eggs. Add egg mixture to IP and cook (still on Sauté) for 2-3 more minutes until broth has thickened slightly (not gravy-like, it's still a broth, but it will lightly coat the back of a spoon).

Dietary Fiber 膳食纤维
Soluble fiber 可溶纤维
食物纤维是一种特殊的营养素,其本质是碳水化合物中不能被人体消化酶所分解的多糖类物质。食物纤维有数百种之多,其中包括了纤维素、半纤维素、果胶、木质素、树胶和植物黏胶、藻类多糖等。膳食纤维是食物中非营养成分,但是对人体健康有益。又称为可溶性黏性纤维。
主要为植物性食品: 粮谷类、豆类的麸皮、糠、豆皮含有大量的纤维素、半纤维素和木质素;
燕麦和大麦含有多量的粗纤维;
柠檬、柑橘、苹果、菠萝、香蕉等水果和卷心菜、苜蓿、豌豆、蚕豆等蔬菜,含有较多的果胶。
除了来源如此丰富的膳食纤维外,近几年又出现许多从天然食物中提取出的膳食纤维食品可供食用的同时也具有比普通膳食纤维更好的效果。如蒟蒻(魔芋)以及菊芋中所提取的水溶性膳食纤维。
膳食纤维的生理功能:这类物质能刺激肠道蠕动,有利于粪便排出,可预防便秘、直肠癌、痔疮及下肢静脉曲张;可预防动脉粥样硬化和冠心病等心血管疾病的发生;预防胆结石的形成。产生饱腹感,对肥胖病人进食有利,可作为减肥食品。改善耐糖量,可调节糖尿病人的血糖水平,可作为糖尿病人的食品;改善肠道菌群,预防肠癌、阑尾炎等。
Insoluble fiber 不可溶纤维
1、芹菜 芹菜具有醒脑健神、润肺止咳、消肿解毒、通便降压等功效。现代研究表明,芹菜中含有较丰富的膳食纤维,对预防和治疗便秘有一定的作用。但脾胃虚弱、消化不良、大便溏薄者应少吃芹菜。
2、韭菜 韭菜含粗纤维较多,且比较坚韧,不易被胃肠消化吸收,能增加大便体积,促进大肠蠕动,防止大便秘结,故对痔疮便秘者有益。
3、空心菜 空心菜中富含大量的粗纤维,由纤维素、半纤维素、木质素和果胶等组成,空心菜中的木质素可以增强巨噬细胞吞食细菌的活跃度,果胶可加速体内有毒物质分解、排出,也会被用于治疗疮疡、痈疖等。
4、红薯 其所含纤维物质在肠内能吸收大量水分,增加粪便体积,对促进胃肠蠕动和通便非常有益,常用来治疗痔疮及肛裂等。
5、白萝卜 生吃可促进消化,还有很强的消炎作用,其辛辣的成分可促进胃液分泌,调整胃肠功能。另外,所含丰富的粗纤维,能促进胃肠蠕动,保持大便通畅。
6、竹笋 竹笋味甘、微寒,其含有的丰富植物纤维可以促进肠胃蠕动、减小肠内压力,可使粪便变软而利于排出,是用于治疗便秘、预防肠癌的绿色食物。
7、莲藕 莲藕富含食物纤维,能清除肠道污物,防止大便秘结,刺激肠壁,防止便秘。莲藕中含有的单宁,可改善肠胃的作用力。藕性寒,生食具有清热作用。
8、西兰花 西兰花能给人体提供一定量的维生素C和胡萝卜素,阻止细胞癌变,有效防癌抗癌。西兰花含有较多的膳食纤维,对体内废物的堆积和排出具有很有的积极作用。
9、大白菜 大白菜富含的粗纤维,能助消化,促排便。大白菜富含的维生素C和维生素E,有抗氧化作用,能有效护肤养颜。大白菜富含能分解与乳腺癌有关的雌激素的微量元素,能有效预防乳腺癌。
10、玉米 玉米的纤维素含量很高,食用玉米有助于排便、预防便秘。玉米内含丰富的镁、硒元素,食用玉米能清除脑、体内的代谢物,有一定的抗癌作用。
11、荸荠 荸荠中富含膳食纤维,对人体是有很多好处的,每天进食一定量的膳食纤维可以预防大肠癌的发生。荠中的粗蛋白、淀粉,可以帮助促进大肠蠕动,对滑肠通便有着很好的效果,可以解决便秘烦恼。荸荠质嫩多津,可治疗口渴的症状。
12、牛蒡 牛蒡叶热量低,含有丰富的维生素和胡萝卜素,经常食用,有助于减肥。牛蒡叶还含有丰富维生素和胡萝卜素,能够提高人体代谢。
13、豌豆 豌豆中含有大量粗纤维,可以促进肠蠕动,及时排除废物。而且豌豆中含有优质的蛋白质,对增强人体免疫力起很大作用。豌豆中含有大量的胡萝卜素,可以有效的抑制癌细胞的形成。

Garlic Knot
Bake a clove of garlic in the oven 400 F for 45 mins, squeeze them out
2 cups flour sugar salt dried rosemary 1 table spoon olive oil 1 tea spoon yeast 2/3 luke warm water  Mix 3-4mins smooth Roll into a big rectangular shape
Spread baked garlic (Add a little oil) + Mozzarella cheese
Fold over and cut into thin long slice 1/2 inch
375 F till get it gold and brown
Melt button, salt, pepper, parsley

1 3/4 cups buttermilk 2 eggs 1/2 tsp vanilla 1/2 cup melted butter MIX
3/4 batter on waffle iron for 5 mins

Cinnamon Raisin Bagel
1 cup raisins  soak raisins for 5 minutes in boiling water 
1 1/2 cups lukewarm water (90° F) 1/4 cup brown sugar 3 teaspoons active dry yeast Let it sit 5 mins
2 tablespoons honey 1 tablespoon canola oil 1 1/4 cups whole-wheat flour 4 teaspoons ground cinnamon 1 tablespoon kosher salt 2.5-3 cups bread flour Mix and knead, let it rise 10 mins
Make bagel circles,  let it rise 20 mins
Boil each side for 45 seconds
Egg wash: 1 large egg white, lightly beaten 425 °  for 15 minutes. Turn the bagels over and bake until golden brown, about 5 minutes more

The ultimate way to thaw bagels
Preheat the oven to 400 degrees Fahrenheit.
The first step is to remove the bagels from the freezer. 
Place the frozen bagel on a wire rack over a sheet pan.
Spoon 3 tablespoons of water over each bagel.
Place the bagel in the oven and bake for 14-16 minutes.

Let it rise for 1 hour
PIZZA SAUCE Onions 3 garlic cloves 4 tomatoes A few tablespoons of balsamic vinegar Oregano, salt, pepper ------------simmer for 15mins------------
450° F — 15mins

Turkey Vegetable Soup

Brown the ground turkey and drain if necessary; set aside.
In a large stockpot add 1 tablespoon of olive oil. Sauté the celery and the carrots for 3 to 4 minutes. Add the onion and continue to simmer another 3 to 4 minutes.
Add the diced tomatoes, chicken broth and the tomato paste, stir until well blended. Add the corn, green beans, browned turkey, garlic, thyme, oregano, and the potatoes, stir until well blended. Add the bay leaf. Bring to a boil then turn down the heat and simmer for 30 to 35 minutes or until vegetables are tender.  Remove bay leaf and serve.

Roadhouse Sweet Rolls

milk, sugar, butter, eggs, flour, yeast, salt, water, honey, cinnamon
1 tbsp active dry yeast
1/2 cup warm water
1/2 cup sugar
1/4 cup honey (spray the container) 
10 to 15 minutes until the yeast dissolves and starts to foam. 
2 cups milk scalded and cooled to lukewarm
6 tbsp butter unsalted, melted and cooled (too hot will kill the yeast)
2 eggs
2 tsp salt
Stir
6 - 8 cups all-purpose flour 
Work on the dough put in sprayed container cover with a towel
Let it rise until doubled in size (Place in oven with a cup of hot water, 1-2 hours)
Roll out the dough, 1/2 inch in thickness
Let it rise until doubled in size ( cover with a towel) - - - -  - - - - - - - - - - - - - - - - - - - - - - - - - - - -
Preheat your oven to 350 F degrees.
Bake the rolls for about 15 to 20 minutes or until golden brown. Brush immediately with melted butter. - - - -  - - - - - - - - - - - - - - - - - - - - - - - - - - - -

1/4 cup powdered sugar
1/4 cup honey
