The oven should be heated to 140C, Gas 1. Butter-grime your ramekins.
Make the milk and egg components:
On a low heat, warm the milk and sugar in the pan. We’ll need the measuring cup you used for your milk, so keep it nearby.
On a medium speed, stir the sugar into the 2 eggs and 4 egg yolks. Don’t whisk so vigorously that you produce a lot of bubbles. Bubbles are not what we desire! Return the milk to your measuring jug once it has begun to boil.
Add the milk very gradually while maintaining the mixer’s LOW speed until everything is incorporated. The vanilla is then added.

You run the risk of scrambling your eggs and producing a very lumpy mixture if you add the milk too quickly:
Place a sieve over the measuring jug and pour the mixture back through the sieve into the jug. You may get rid of most of the bubbles and any cooked egg lumps by sifting the mixture.
Don’t skip this section since it will give you the smooth, silky, velvety texture:
Fill the ramekins with the mixture. Ensure that the water in the baking pan is at least 2-3 centimeters high. Using a layer of foil to cover the baking pan, carefully place it in the oven, and cook it there gently for 45 minutes. Bain Marie is a common name for this cooking technique:
Once 45 minutes is up, remove the tray from the oven and leave it as it is with the foil over it until it cools. The caramel will continue to cook slowly.

When it’s time to serve, run the edge of a thin, sharp knife over the sides of the ramekins, being careful not to wobble or slide the blade as this will ruin the set custard inside.
Place a serving saucer on top of the ramekin and, while holding them both, turn them upside down so the saucer is on the table. Lift the ramekin off gently. Gently tap the top or wait a few minutes if the custard won’t come out. In the end, gravity will prevail, and it will emerge.
