My hot take is that with minecraft content, people generally want 1 of 2 things, of which mojang usually tries to do both (and ends up doing neither):
1) if they're adding Shallow content (new flowers for instance), people want a Lot of it. With the Sniffers for instance, their flowers have no complex gameplay mechanics- there's no mechanical reason why they couldn't have added 4 or 8 ancient flowers, since they were purely decorative anyways.
2) if they're adding Complex content, people want it really intertwined with pre-existing mechanics.
Instead of this though, we get a small serving of semi-complex content that ends up satisfying very few critics, like Resin that is just.... a new block set + armour trim. despite being so mechanically unique the depth doesn't extend past the singular pond of content its added in.
I think this is why this newest drop is so promising: they're adding new pig variants, which are mechanically no different than pigs, but they're not Just doing that and calling it good, they're also adding new cow variants and Multiple new plants and who knows what else. & instead of a half-hearted attempt to make this surface level content more complex resulting in less content overall, we're just like... actually getting content that fleshes out the game more. This is also why I think every dyed-block-update has been so well received: instead of just "they added 1 terracotta block" or "they added 1 stained glass block" it's always been "they added 16 new variant blocks that aren't restricted to a singular colour palette". Applying this logic to other design features I think is just overall a good idea.
