If you want to impress your date with the excellence of your espresso, you won't be doing it with stale pre-ground coffee. You have to grind it right before you pull the shot or the quality of your espresso will suffer. It's advised that you spend about as much on the grinder as you would on the machine, so, if you have a $500 budget, look for a $250 grinder. Yes, this IS that important! If you're not willing to invest in a good grinder you may as well stick with your ancient Mr. Coffee machine.
