Who’s trendy in 2016?
We all ate some pretty crazy things in 2015, and I’m pretty sure our waistline increased a little bit.. don’t tell me you didn’t have a donut on a milkshake.. The rain of the over stuffed bagel and the piazza taco is gone. The dawn on the millennials is clearly taking over, the generation that is born in the 2000′s and they love a good feast.
These young adults have been brought up in a baby boomers household and have been exposed to world travel, dining out and seem to know everything. Over the past years since 2013 they have been binging on everything OTT, and have clearly pushed the creativity of the hospo industry. I see in 2016 this will start to relax a little, the wacky will hang around at least till March, then the appreciation for where the food comes from will take a new stand. People will care more about the quality rather than the quantity, locally sourced and clean simple cooking methods will come into play, and I’m excited!
Farmers and local fresh food markets will be on the rise, along with local butchers and cheese makers. The push for consumer freedom of choice will be bigger than ever, with the increase of say Maccas letting you choose almost anything these days, with a proposed condiment station in store, giving you even more choice, you can order something “healthy” but you can still have you cheese burger it just makes the environment seem to be healthy..
My hot tips for 2016: Turmeric will see centre stage you’ll see it pop up more this year. - Nduja (n-doo-ja) a spicy pork sausage paste from Calabrian region in Italy, mix this one on your beef patties or fold through a mayo you will be in heaven… move aside chipotle - Local famers markets and homemade products - We wave good bye to the humble milk in 2016, with the rise of the cold drip, aero press and cemex coffee, these will be delivering our 6am BUZZ.
Enjoy whole foods this year people and stop stacking things on top of mansion jars!
