Application of CMC in Food
Carxymethyl cellulose in food sodium (CMC) has many functions, such as thickening, emulsification, suspension, water retention, toughening, expansion and preservation, which are incomparable with other thickeners. When used in food, it can improve the taste, grade and quality of products, and prolong the shelf life.
I. Functions of

1. Thickening: Viscosity can be obtained at low concentration. It can control the viscosity in the process of food processing and give the food a sense of lubrication.
2. Water retention: reduce the dehydration and shrinkage of food, prolong the shelf life of food;
3. Dispersion stability: Maintain the stability of food quality, prevent oil-water layer (emulsification), control the crystal size of frozen food (reduce ice crystal);
4. Film-forming: Form a layer of film in fried food to prevent excessive absorption of grease;
5. Chemical stability: It is stable to chemicals, heat and light, and has certain anti-mildew properties.
6. Metabolic inertia: As a food additive, it will not be metabolized and will not provide calories in food.

CMC Usages in Papermaking Industry
Apply CMC into the paper pulp (add before pulping and alums mixing). CMC can disperse fiber, improve uniformity and strength of paper (bursting strength and stiffness). Using CMC with the same beating degree can shorten beating time, conserve energy. Dosage of CMC is 0.2%-0.8% of paper pulp. Can use CMC RM8-1. With the add of CMC, paper tension increases 40%-50%, tearing strength raises 50%, flexibility increased 4-5 times. Meanwhile, paper quality is of smoothness with good ink absorbency and clear printing edge. It's much better to use hard water during production.
2. Surface Sizing Agent
Sound surface strength is required during high-speed printing. When there is a low beating degree or high filling content, usually adopt a surface sizing method to increase the surface strength of paper and paperboard, reduce surface absorption. Through surface sizing, fiber holes of paper are sealed by a layer of sizing film. It can reduce the absorption of moisture in the air, as well as evaporation of moisture in the paper. Prevent paper from rolling up and crushing. Improve the paper absorption of ink and oil. Has the effect of grease-proof, waterproof and oil-resistant.
To avoid paper and paperboard surface lint and powder falling, can use CMC solution with low viscosity and medium viscosity. With medium viscosity, CMC solution can get a layer of compact grease-proof film. Usually, use CMC solution with 1%-2% concentration can get 0.1g/m2--0.5g/m2 sizing. Users can also decide CMC viscosity according to the different base paper. It can mix low and medium viscosity CMC. High purity CMC has a good property of paper film-forming. Instead, Industrial grade CMC with low purity has poor performance on paper film-forming. Dosage of CMC is 1/2-1/3 comparing with that of starch. Especially that modern paper-making factories conduct sizing with the high-speed machine, which can only apply CMC solution with lower viscosity and high purity.
3. Coating Agent
Coating whiteboard paper and chrome paper usually need coating pigment. Use CMC in coating color can improve water retention and rheology effect. CMC is featured by characteristics of good dispersion and binding, with the dosage 0.5%-2.5%. The exact dosage is according to different viscosity and speed of machines.

1. CMC Applications in Fermented Yoghurt
1.1. Main Raw Materials of Fermented Yoghurt
Fresh milk or milk powder, sucrose ester, compound stabilizer (including CMC), granulated sugar, sodium citrate, phosphate, preservative, essence and drinking water, etc.
1.2. Processing Technology
Raw milk→Sterilization→Cooling→Insulated fermentation→Cooling→(Compound CMC+Sugar+Sucrose Ester) Completely dissolving and then adding→Stirring→Flavoring acid and odor→Homogeneous sterilization→Cooling→Packing
1.3. Key Point During Processing
1.3.1. The compound stabilizer is acid-resistant CMC: PGA (propylene glycol alginate)=1:1, the dosage of compounded CMC accounts for 0.4% of the total amount.
1.3.2. Compounded stabilizer, sugar and sucrose ester had better be dry-mixed. Then dissolving with 50℃ water. Filtering the solution after complete dissolution. Cooling it to 15℃ and add into the yogurt.
1.3.3. Slowly flavoring acid, then becoming quickly to control the final pH value at 3.8-4.0. The temperature should be below 15℃when flavoring acid and odor. The conditional factories usually agitate below 5℃.

Description of Oil Drilling Grade CMC & PAC
CMC & PAC can be used as fluid loss reducer or viscosifier in drilling fluids. The function of CMC is to reduce the fluid loss as much as possible through forming low permeability, flexible, thin and compact filtration cake on borehole wall. Used as thickening agent, suspension agent and plugging agent.

Sodium carboxymethyl cellulose (CMC/cellulose gum) is kind of cellulose ether, can easily soluble in cold and hot water, with maximum yield, most widely and conveniently used among all cellulose products. We classified food grade CMC into two types, type 6 and type 9. Preventing re-deposition of dirt effect
Adding sodium carboxymethyl cellulose in detergent has the function of preventing the re-deposition of dirt. The working principle is that negatively charged dirt granule and charged sodium carboxymethyl cellulose molecular absorbing on fabrics has mutual electrostatic repulsion.

SODIUM CARBOXYMETHYL CELLULOSE
Sodium carboxymethyl cellulose (Na-CMC or cellulose gum) is the most widely used and most frequently used type of anionic cellulose ether. It is a white fibrous or granulated powder. Odorless, tasteless, non-toxic, hygroscopic, easily soluble in both hot and cold water, obtained by chemical modification of natural fibers featured by unusual and extremely valuable physical and chemical properties. The main raw material to process CMC is refined cotton and wood pulp.
