In the second mission of Flipsville Galaxy in Super Mario Galaxy 2, there is an area on the wall of the large town-like planetoid where the player character will stand sideways instead of sliding down after reaching it in the way shown in the footage. From there, a precise backflip can be used to skip to a later planetoid of the mission.

In Super Mario Galaxy, Hint Toad (not named in that game; only named as such later in Super Mario Odyssey) has an oversight with his design when he assumes his low-quality model while far away from the camera.
During this, his glasses are placed incorrectly on his face, largely merging with his head so that only the outer edges of the rims are visible. This can not be distinguished on original hardware but can barely be seen in the distance in the Super Mario 3D All-Stars version.

In the first mission of Slipsand Galaxy in Super Mario Galaxy 2, Mario or Luigi must slide down an extremely long slope. After they begin sliding, cylindrical Thwomp-like enemies called Rhomps appear from behind and attempt to squash them by rolling over them.
If the player is playing as Luigi and performs an extremely precise long jump just as Luigi is about to be rolled over by a Rhomp, Luigi will gain immense speed that will catapult him into the air as seen in the footage.
Unfortunately, there is no way for the player to slow down Luigi at that point, so that after flying far enough to exit the regular gameplay area, Luigi will leave the boundaries of the galaxy, and die.

In Super Mario Galaxy, the "Gusty Garden's Gravity Scramble" mission of Gusty Garden Galaxy contains a group of three flat disc planetoids before the main area of the mission, a structure with changing gravity made out of blocks that change between displaying question mark and exclamation point designs.
As the gravity of the final section changes several times, there are windows where it is pointing towards the flat disc planetoids. During those times, it is possible to make Mario fall down onto those planetoids with precise jumps.
However, upon landing, it is revealed that the gravity on the discs is glitched as a result of Mario no longer intended to be there. Mario will randomly perform somersaults on the surface of the discs as shown in the footage due to being pulled sideways.

mario galaxy speedrunning gets a bad rep for being, and i quote, "a boring long jump simulator" because it doesn't have the same fancy skips and complex movement as games like mario 64 or mario sunshine, but i think that take is really uninformed. galaxy speedrunners have some really insane skips that utilize the game's different gravity systems and various movement mechanics. just last year, this skip was found that saves about 40 seconds and skips an entire level
youtube
and this trick, while slightly older, also skips pretty much an entire level
youtube
it's really cool and impressive to watch and you should check out some speedruns for these games if you're interested
