Just buy nuoc-man for garum.
Also all of apicius "recipes" are gut-turning, most roman food was terrible. That one meal that's basically dip your bread in red wine, make a wet paste and mix it with tripes. No.
A famous Roman gourmand who lived in the 4th and 5th centyry AD. According to legend Apicius committed a suicide after he had lavished an enormous fortune in food and delicacies. Had something like 1 million Sestertii  left which was insufficient to maintain standard of living he was used to. I once skimmed a paper version of this book and some of the recipies - especially veggie stuff - aren’t too difficult. others. like those that include garum are impossible. I reminisce that garum was some sort of sour sauce where decaying fish was among the most important ingredients, yummu ;). I also recall reading that Hispania was one of the main sources of this product.
Gutenberg site, so book is available in several formats

Wolf-Head Barge Fixture, 1, Cleveland Museum of Art: Greek and Roman Art
This snarling wolf head is closely similar to others that were attached to a luxurious pleasure barge moored on a lake near Rome. The ship was designed as a floating platform for elaborate, hedonistic parties. Size: Overall: 21.9 x 16.8 cm (8 5/8 x 6 5/8 in.) Medium: bronze
