Tagaytay: A Serene Escape Above the Clouds
Tucked away in the Philippines' verdant interior, Tagaytay offers a charming diversion from Manila's busy metropolis. Winding roads carried me to this picturesque highland retreat just two hours' drive from the capital city as I set off on this expedition. This quaint hamlet, which is perched on the brink of the Taal Volcano caldera, has a calm, revitalizing atmosphere that captures the heart.
I arrived to the magnificent sight of Taal Lake, a vast body of water that embraced the well-known Taal Volcano Island. Nothing compares to the breathtaking vista that stretches seemingly forever into the distance that can be seen from the top of Tagaytay Ridge. As I stood in awe of the majesty of nature, a chilly breeze stroked my skin.
While strolling around the center of Tagaytay, I savored the regional specialties, especially the famous bulalo. After simmering for hours, this flavorful beef soup warmed my soul and my taste buds. It felt like a true Filipino feast when paired with freshly picked veggies and steamy rice. Beyond its scenic surroundings, the town has a certain charm. I took comfort in perusing the colorful markets brimming with regional vegetables, handcrafted items made from intricate webbing, and charming souvenirs. I felt closer to this lovely place as the residents, with their welcoming grins, told me stories about Tagaytay's rich culture and history.
Looking back, Tagaytay is an experience that revitalizes the soul, not merely a place to visit. Its serene atmosphere, breathtaking scenery, and the sincere friendliness of its people weave an enduring tapestry of memories. Knowing that Tagaytay's charm will always draw me back to its embrace above the clouds, I left this highland paradise with a refreshed sense of peace and a strong desire to return.

Chicharon bulaklak is a Filipino dish made from deep-fried pork intestines. Its name, "bulaklak," translates to "flower" in Tagalog, referring to the appearance of the crispy and intricately curled pork intestines that resemble flowers after frying.
The exact origin of chicharon bulaklak isn't precisely documented, but it's deeply rooted in Filipino culinary tradition. The dish is believed to have originated from regional or provincial kitchens and has become a popular street food and beer match in the Philippines.
Preparation involves cleaning the pork intestines thoroughly, removing excess fat and membranes, and then boiling or simmering them until tender. Afterward, the intestines are deep-fried until they achieve a crispy texture.
Chicharon bulaklak is often seasoned with salt or other spices and served with a vinegar-based dipping sauce. It's a beloved dish in Filipino cuisine, enjoyed for its crunchy texture and rich flavor, often as a complement to other dishes or as a snack during gatherings or celebrations.
