Cultural Cuisine: Rock Candy

Honestly, of all the bizarre quirks of the Avatar world, rock candy being actual rock has to be the most random. In a roundabout way, it does make some sense, though. In traditional Chinese cooking, bīngtáng (冰糖) or rock sugar is the most common ingredient for sweetening dishes. Since the Earth Kingdom is a Chinese-inspired nation of people who can magically control rocks, it’s kind of fitting that their sugar would be literal rock sugar.

Actual rock sugar is the oldest form of refined sugar in the world. The method was invented in India roughly ~2,500 years ago, where sugar cane juice would be boiled down and left to crystallize into a rock-like form. This technique was introduced to China through traveling Buddhist monks during the 7th century.

Due to its larger crystal formations, rock sugar is less sweet and slower to melt/burn than granulated sugar. This makes it especially ideal for rich sauces and glazes that require long stretches of simmering to thicken them. Its subtler sweetness means that it can also be eaten alone as candy, as Bumi seems to prefer. :)
