Egg Custard Tarts

The ever tempting egg custard tart from “The Great Divide” is inspired by real-life Chinese egg tarts, which were inspired by the British custard tarts of the early 20th century. You can find Chinese egg tarts at most dim sum eateries and Asian bakeries. This is definitely one of the more modern dishes to appear in ATLA and yet another reason why “The Great Divide” is a weird episode.

Bean Curd Puffs

Aunt Wu’s bean curd puffs are better known in the English-speaking world as tofu puffs or fried tofu. To make this dish, cube up some soy bean curds (tofu) and deep fry them in oil. They should have a slightly crispy exterior with a spongy interior. They can be eaten on their own as a snack, or used in stews and stir-fries. You can find fried tofu in many East and Southeast Asian dishes.

Roast Duck

The roast duck that Song and her mother serve to Zuko and Iroh is likely Peking duck (北京烤鴨). The meat is characterized by its thin, crispy skin. Historically, it was considered a dish for the Chinese upper class due to how time consuming it was to prepare. Since Song offers roast duck to Zuko and Iroh after just meeting them, it’s telling of how generous (and relatively wealthy) she is. You can get Peking duck at most sit-down Chinese restaurants.

Jook

When Zuko falls ill from his “internal conflict fever”, Iroh prepares some jook for him. Jook (粥) is the Cantonese name for rice porridge. Rice porridge is consumed all throughout East, Southeast, and South Asia. It’s often eaten for breakfast or when ill, as its mushy texture and mild flavor are seen as ideal for digestion. Growing up, I used to have rice porridge for breakfast pretty often, usually eating it with salted soy beans and dried fish.

We  spend  so  much  time  hiding  who  we  really  are,  making  sure  no  one  sees  the  person  we  truly  want  to  be.

It's  hard  to  remember  there  was  a  time  when  we  were  truly  excited  to  show  the  world  our  true  face.

I  remember  my  first  war  council  meeting,  they  were  smaller  affairs  back  then.

Perhaps  it's  because  we  don't  want  people  to  know  how  much  they  really  mean  to  us.

The  truth  is,  we  would  do  anything  for  those  we  love.  We'd  travel  incredible  distances...  risk  our  lives.  Even  fight  monsters.

But  I  suppose  it  can  be  scary  to  admit  you  need  people.  Some  might  see  that  as  a  weakness,  a  liability.

After  all,  what  greater  pain  is  there  than  losing  someone  you  love

I  guess  that's  why  we  feel  the  need  to  hide  away  and  protect  ourselves.  So  we  put  on  a  mask,  it's  not  hard  to  understand  why.

What's  hard  is  knowing  that  sometimes...  the  mask  you  put  on  is  who  you  really  are.

Cultural Fashion: Toph’s Sleepwear

A quickie post. When Toph gets kidnapped, she appears to be dressed in her sleeping clothes. For most of Chinese history, people tended to sleep in their zhong yi (中衣) or “middle clothes”, which were the white inner clothes that people wore over their underwear and under their normal clothing; the modern day equivalent would be sleeping in a tank top or a slip. Toph’s off-white dress appears to be one-piece zhong yi.

Over her zhong yi, Toph is wearing a half-sleeved jacket called a banbi (半臂), which were popular during the Tang Dynasty (618-907). As banbi weren’t normally worn to bed, Toph might have been wearing it in preparation for going outside to talk with Aang. Plus, the dress looks a little shear so the banbi might have been for modesty purposes.
