The Eight Chinese Cuisines 湘菜– 左宗棠鸡 Zuo Zongtang Ji (General Tsao’s Chicken)

Everyone loves General Tsao’s Chicken! But apart from the name, it has absolutely nothing to do with the General. The dish was invented by a cook named Peng Changgui back in 1970. When asked about the name of the dish by the then Premier of the Republic of China Chiang Ching-Kuo, Peng came up with the name at the top of the head. The dish was then popularized in the US by Kissinger and an ABC Special Feature in the 1970s.

The Eight Chinese Cuisines湘菜 Xiang Cai (Hunan Cuisine)

湘菜Xiang Cai is the cuisine originated from Hunan Province. Just like Szechuan Cuisine, Hunan Cuisine also centers around a spicy taste, but instead of pursuit of extreme hotness, 湘菜accentuates on marrying the piquant taste with the raw flavors of the ingredients.

The Eight Chinese Cuisines粤菜– 佛手排骨 Fo Shou Pai Gu (Buddha Hand Spare Ribs)

Doesn’t this look like an open hand to you? This is called佛手排骨Fo Shou Pai Gu, which means Buddha Hand Spare Ribs. It requires a lot delicate work including taking out the bones in ribs, even chopping, shaping the mixture of lean and fat pork, shrimp, and re-decorating the bones with the mixture.

One of the prominent characteristics of Cantonese Cuisine is creativity, which is manifest in果汁煎肉脯 Guo Zhi Jian Rou Pu (Fried Pork with Fruit Juice), a dish with a reference from Western steak. Instead of the sauce in the steak, the fried pork here is cover with juice, adding to it a fruity flavor and aroma in addition to the crispy texture of the meat.

佛跳墙 Fo Tiao Qiang (Buddha Jumps Over the Wall) is a mixture of over 10 ingredients such as pigeon, pork, chicken, duck, etc., stewed in a Shaoxing Wine Jar. It is a truly internationally famed dish that even got praised by the US President Reagan and Queen Elizabeth. Legend has it that when it was first made, even the Buddha couldn’t resist the aroma and jumped over the wall to appreciate it! That’s how it got its name.

With a history of over 800 years, 宋嫂鱼羹 Song Sao Yu Tang (Lady Song’s Thick Fish Soup) was named after an old lady back in Nan Song Dynasty, who served the soup to the Emperor Zhao and was rewarded with a great fortune because of the delicious dish. It is made up of pulled steamed Mandarin fish or bass, with a resemblance in flavor with crab soup.
