Traditional Nasi Lemak Recipe: Step-by-Step Guide
Nasi Lemak is a traditional Malaysian dish consisting of rice cooked in coconut milk and pandan leaves, which gives it an aromatic flavor. It is typically served with a variety of accompaniments such as sambal (chili paste), fried anchovies (ikan bilis), roasted peanuts, boiled or fried egg, and cucumber slices. Ingredients
For the Coconut Rice:
2 cups of rice
1 ½ cups coconut milk
1 ½ cups water
2 pandan leaves, tied in a knot
1 ½ teaspoon salt
For the Sambal:
2 tablespoons oil
1 large onion, finely chopped
2 cloves minced garlic
1-inch piece of minced ginger
10 dried chilies, soaked in warm water and blended into a paste
2 tablespoons tamarind paste
½ cup water
1 tablespoon sugar
Salt to taste
Accompaniments:
½ cup fried anchovies
½ cup roasted peanuts
2 hard-boiled eggs, halved
1 cucumber, sliced
Instructions:
Step 1: Preparing the coconut rice
Wash or rinse the rice.
Combine the rinsed rice, coconut milk, some water, pandan leaves and a little bit of salt in a rice cooker. Stir the mixture well and cook until there are no liquid left in the rice cooker and the rice is tender.
When the rice is already cooked, remove the pandan leaves.
Step 2: Making the sambal
Heat the oil in a pan over medium heat. Continue by adding the chopped onion, garlic and also ginger. Add the chopped onion, garlic, and ginger. Sauté until the onions is fragrant.
Add the chili paste to the pan and cook for about 5-7 minutes, stirring frequently until the oil starts to separate from the paste.
Stir in the tamarind paste, water, sugar, and salt. Stew the sambal for another 10-15 minutes, or until it thickens and achieves a rich, deep colour.
Step 3: Preparing the accompaniments
In a small pan, heat some oil and fry the anchovies until they are crispy.
In the same pan, roast the peanuts until they are golden brown.
Boil the eggs. Once cooled, peel and cut them in half.
Thinly slice the cucumber and set aside.
Step 4: Assembling Nasi lemak
Place a scoop of coconut rice within the center of the plate.
Spoon a serving of sambal next to the rice.
Add the friend anchovies, roasted peanuts, egg halves, and cucumber slices around the rice.
Nasi Lemak is ready to serve.
