At the gate for my flight home from visiting friends and there's a woman here with a service Shiba Inu. No pics because he has a Do Not Disturb vest and taking pics of strangers is illegal but I need to stress how ON DUTY this animal is. Ears up. Eyes doing Lazer scans of everything. Examining everyone who passes within 10ft like a security guard. Ass planted on her feet. I have never seen a dog with such intense chivalric guardian energy before. He has tiny eyebrows and they are FURROWED with concentration.

Grouse. I split the bird in two and then cooked it in the sous vide at 83°c for a couple of hours before finishing it in the pan. The potato is roasted with rosemary. The kale was steamed and then finished in the grouse pan, with some wine added and some creme fraiche.

Wonderful birthday dinner at Edinburgh's Little Chartroom. Beautiful little treacle soda breads, oysters sitting in a little Arbroath Smokie dashi, a ham and cheddar rarebit sat on a crumpet with assorted pickles, asparagus and confit egg yolks partnered by a roast chicken hollandaise, and merguez sausages and chargrilled tenderstem broccoli with broad beans in a green goddess dressing. Not pictured: a blueberry pannacotta with honeycomb that we ate before we remembered to document it.
You eat in what is not a huge space but even though you are right next to a road, and though there is a buzz of conversation all around you and music playing, the acoustics have been managed so you can just talk at normal volume.
I had a view to the kitchen where they were barbecuing and plating. What surprised me the most about my enjoyment of the evening was watching them clear down at the end of service. Professionals doing something well is something that never gets old.
So here is to another (at least?) 45 years of eating, especially if I get to share them with my wonderful partner in crime (who took the photos because her camera is a lot better than mine). I hope that you all get to eat something special on your special days this year.
