After making today’s dinner (chicken & dumplings from one of Ree Drummond’s most recent pioneer woman cookbooks) I chose to get on here & post some of my most recent meals I cooked. I realized my bio still said I was a future Mrs …which I am now Mrs. Smith. It also said mom of 3 dogs. I’m now a mom of 2 as we said goodbye to my first baby. My soul dog. My sweet golden angel. Almost a year ago now. & finally it said I was still a maker of 2 meals. I’m not anymore. As of a little over 6 months ago I began eating meat again. It’s still hard for me to eat these things. I still haven’t had any “beef” (cow) & I try to stick to chicken and turkey, as well as the venison my husband shot that is in the freezer. My priorities and views have shifted as we’ve been midwesterners again for a while now. I realize it has been expensive for us to try and afford meat for my husband (who will never stop eating meat & I will never make him) as well as fake meat for my meals. Making 2 meals was a strain on our wallets. I also found myself in a lot of situations where I was without food to eat because the majority of people eat meat as their main meal. I spent a lot of summer get togethers or holiday parties eating random things off the appetizer trays. It wasn’t sustainable for my life. And honestly I’ve begun to realize how important self sustainability and homesteading is to me. I have always felt I was meant to provide for myself in every way I can. I’m not ready to dive back into eating burgers and hot dogs, pork chops & ground beef, etc. but for now I need to do what’s best for my financial situation.

At the end of January by the request of my husband I made my first ever Mississippi roast with venison he shot himself. It turned out great. Next time I’ll skip the carrots and potatoes - they were an unnecessary addition that I didn’t end up enjoying. But the meat itself was perfect. 🦌

I got a Dutch oven at my bridal shower this past weekend & I immediately used it the very next day to make chicken and dumplings for the first time. I also got the mixing bowl pictured (it has foxes on it) as well as a pioneer woman knife set which included the knife pictured. Oh & the cutting board! I got so many other amazing things too. 7 pioneer woman dish towels, a bunch of new utensils, an over the sink dish rack (huge space saver in my tiny kitchen!), some adorable cowboy boot salt and pepper shakers, a mop bucket, an electric skillet, I could go on but my kitchen is well stocked now!

Had 2 wooden wine boxes in my upstairs library I was using as a small bookshelf, ended up clearing one out and bringing it downstairs to put on the table and use to store my cookbooks in! It also works perfectly as a small shelf to store my cookbook holder - especially since my kitchen is quite small & I’ll take any space saver ideas I can get!
