Besides the portrayal of speed and flight, here's one other big contrast between American and Japanese mechs in terms of games. In Battletech/Mechwarrior you can swap out weapons and parts, but are restricted to stock models, you can't kitbash limbs and heads like in Armored Core or Front Mission.
