I love this. I love all of these. But I want to focus on one in particular.
"Your emotions aren't scaring me away. I'm here." - 'and I'm here to stay'.
I added the last bit on because it makes it verbatim what I was told. And let's just discuss the impact. Because I'll tell you now, a single person in my life has said this to me. I wouldn't have said at the time that I was really close to this person. But they had identified I was struggling, had gotten me to open up a small amount and then said this.
I sobbed. I felt torn apart in the best possible way. I felt raw and I felt new. Why? I have anxiety. I have depression. I don't like sharing about it because I don't believe myself to be in a situation where I should have either. So I hide it wherever I can. Which made it worse and made me bottle things up. This person came to me when I was breaking apart at the seams. I'd stopped eating. Stopped taking certain medications I rely on. For two weeks, I didn't eat over 500 calories. I wanted to disappear and I was terrified of my thoughts. And if I was scared of my thoughts - why on earth wouldn't everyone else be? I'd cause worry and concern and pity and I didn't want any of it. So I bottled it and smiled.
When this person said those words to me? They saved my life. They've lengthened my lifespan. I may not yet be in a place where I'm grateful for that. But they gave me the hope that one day - I will be.

Vegan Blueberry Muffins
So, I’ll start this post by saying; I AM NOT VEGAN. That being said, I am open minded to the foods of the lifestyle. If I have managed to make this recipe “not vegan” by any ingredients please let me know as I love to learn and correct my mistakes! Be kind, this is my first vegan recipe!
What you need:
2 cups all purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 tablespoon corn starch
1/4 teaspoon salt
3 teaspoons ground cinnamon (or more to taste)
2 teaspoons ground nutmeg (or more to taste)
1 1/4 cup unsweetened soy milk
1 teaspoon apple cider vinegar
1/3 cup canola oil
1 teaspoon pure vanilla extract
1 1/2 cup fresh blueberries
What you do:
Preheat the oven to 400 degrees, prepare a muffin tin.
Combine the soy milk and vinegar and set it aside to curdle, this will be our “buttermilk” like substance.
In a large mixing bowl combine all the dry ingredients: flour, sugar, salt, cinnamon, nutmeg, baking powder, corn starch.
Once dry ingredients are combined, pour in your wet: the “buttermilk”, the oil, and the vanilla. Mix the ingredients until smooth.
Fold in the fresh blueberries, then fill the muffin tins. (I use an ice cream scoop for this step.)
Bake for 22-26 minutes until golden brown, and when a toothpick comes out clean when inserted!
