5 common words my Chinese classes and textbooks didn't teach
Don't get me wrong, I enjoy learning with classes and textbooks. But no single resource or method can teach you the entire language! Here are 5 words (do particles count as words?) I see/hear all the time in native content that I never learned from classes or textbooks. Looking back, I'm surprised these weren't taught!
不仅 | 不僅 bùjǐn - not only (or 不仅仅 | 不僅僅 bùjǐnjǐn)
有这种看法的不仅是我一人。 他的病情不仅不见好转,反而更加严重了。
即 jí - namely / that is / i.e.
闽即福建省的简称。 元旦,即公历的1月1日,是世界多数国家通称的“新年”。
平时 | 平時 píngshí - ordinarily / in normal times
你平时都喜欢做什么? 他的打扮跟我平时遇到的人不大一样。
稍 shāo - somewhat / a little
请稍等。 说到这儿,他稍停了停。
呗 | 唄 bei - modal particle indicating lack of enthusiasm / modal particle indicating that things should only or can only be done a certain way
你不同意,那��算了呗。 既然不懂,你就好好学呗。
PS: I actually checked the textbooks I used in college to confirm that these weren't covered. But of course they could have been included in your textbooks.

Reasons why Mandarin is MUCH EASIER than you think
Everyone’s probably heard about what makes Mandarin hard (the tones, the characters, etc.). Well guess what? Mandarin is much easier in some regards as well:
1) Mandarin is S-V-O (subject-verb-object) just like English (e.g. 我吃饭 “I eat meal”).
2) Mandarin has NO subject-verb agreement rule (e.g. 我跑,你跑,他跑,她跑 “I run, you run, he run, she run,” not “he runs” and “she runs” because the verb never changes).
3) Mandarin has NO PLURALS (e.g. 一本书,两本书,三本书 “one book, two book, three book”).
4) The NUMBERING SYSTEM IS STRAIGHTFORWARD and has no odd names like “eleven” and “twelve” (e.g. 10: 十,11: 十一, 12: 十二, 13: 十三).
5) Nationalities are SUPER EASY: just add the character for person 人after the name of the country. No need to remember which ones end in “-an” (Mexican), which end in “-ese” (Chinese), or which end in “-ish” (Irish). (e.g. 中国人 = Chinese person, 美国人 = American person, 日本人 = Japanese person).
6) Prepositions are SUPER EASY. The same preposition can be used in multiple ways, and preposition pairs with opposite meanings are always direct opposites with no exceptions (e.g. 上 = up, above, on top of, before, previous; 下 = down, below, underneath, after, next).
7) Mandarin has NO VERB TENSES (e.g. 我昨天去公园,我现在去公园,我明天去公园 “Yesterday I go to the park, right now I go to the park, tomorrow I go to the park”).
8) Questions and answers are in the same order (e.g. 他是谁? 他是John。 “He is who? He is John.”). Simply replace the question word with the answer and leave the structure alone.

Noun + Measure Word Compounds (名量式合成词)
I’ve noticed several words in my studies that are of the form noun + m. word. I thought this was really interesting, so I started jotting down the words I noticed or could think of. In some cases, the compound word basically means the same as just the plain noun! I’ve noticed that the compounds tend to be used in writing or more formal speech. In other cases, the compound has a distinct but related meaning. This is certainly not an exhaustive list—I hope I encounter and learn more in the future!
一封信 yì fēng xìn - a letter 封 fēng - to confer / to grant / to bestow a title / to seal / classifier for sealed objects, esp. letters 信封 xìnfēng - envelope 
一辆车 yí liàng chē - a vehicle / a car 辆 liàng - classifier for vehicles 车辆 chēliàng - vehicle / car
一张纸 yì zhāng zhǐ - a piece of paper 张 zhāng - to open up / to spread / sheet of paper / classifier for flat objects, sheet / classifier for votes 纸张 zhǐzhāng - paper
一本书 yì běn shū - a book 本 běn - root / stem / origin / source / this / the current / original / inherent / originally / classifier for books, periodicals, files etc 书本 shūběn - book 
一匹马 yì pǐ mǎ - a horse 匹 pǐ - classifier for horses, mules etc / ordinary person / classifier for cloth: bolt / horsepower 马匹 mǎpǐ - horse

I'm just starting out learning korean, and I'm a little confused about how the speech levels work. so I understand there's 존댓말 and 반말 but search results show there are seven speech levels of politeness and formality and it's a little confusing. do you maybe have any links to better understand which to use when, etc? thank u in advance!!
Hello! I do have some clues as to how you can figure out the levels for yourself and I will link the resources that you can check out down below! 
For starters, you’re right; there are seven different levels of politeness / formality in Korean. You’re also right in saying that it is confusing! Generally, with beginners, it’s better to know what’s considered “formal” just by looking at the conjugation. For example, we can assume that something with “-ㅂ/습니다” at the end of the verb is considered formal. This is one of the highest levels of formalities. Or something without any formality marker (ie. lack of -요), we can assume it’s the lowest level of formalities. Below is a list of the formalities, and when to use them:
하소서체 ♡ Most formal speech to show the most respect ♡ Used to address royal family members ♡ Also often used in the Bible / scripture 
합쇼체 ♡ Respectful / polite form of speech ♡ Used for elders, strangers, customers, or in business settings ♡ Used for unbiased attitude
하오체 ♡ Outdated formal speech (usually in historical [사극] Korean dramas) ♡ Same rank or lower
하게체 ♡ Also relatively outdated but not uncommon ♡ Can be used by middle-aged adults to other adults (usually lower socially) ♡ Can be used by higher-ranked ppl on social ladder talking to people lower than them (Ex. CEO talking to a lower-level employee) 
해라체 ♡ Formal speech used for the same level or lower ♡ Even though there’s no added respect, it’s not considered disrespectful if you use it appropriately ♡ It’s not as common as 합쇼체, 해요체, 해체 though it’s still used frequently ♡ Necessary to know this level though as it’s used to quote people ♡ Also known as “plain form”
해요체 ♡ Informal but still polite speech ♡ This is the most common and natural speaking level in Korea ♡ 고마워요 // 안녕하세요 // 아니요 ♡ Regardless of relative rank, this level can be used politely and respectfully
해체 ♡ The most informal / casual speech level
Here are examples of the formalities using the verb “사랑하다” - to love:

Even though 해라체 and 해체 are both considered “반말”, 해라체 is considered more formal (remember, “plain form”)

I really really hope this helped in some way! I know that formalities are really difficult to grasp but once you get it, it becomes easier. Like I said above, it’s really easy to start recognizing which formality is used because of how the conjugation ending looks (you even have a bit of a hint inside the formality’s name itself). Formalities can look and sound different / confusing / difficult, but as long as you get the basics down, it becomes a lot easier with more practice.

Do you want to learn Chinese but you don’t know how to start? That’s the post for you! 
Many times I got messages from people who want to learn Chinese Mandarin, but they do not know how to start, what to buy, which website is good or which APP they should download. So I’ve decided to prepare a post where I try to explain as much as I can! Basics about Chinese language, textbooks, useful  APPs and websites. 
Pinyin 拼音  (pīn yīn) Chinese romanization system
The most important thing is to get familiar with sounds and romanization system of Chinese characters.
I recommend you to watch these two videos below:

Get familiar with tones too! In Chinese there are 4 tones: 
first tone  ( ˉ ) called flat or high-level tone  妈 mā
second tone ( ˊ ) called rising or high-rising tone 麻 má
third tone ( ˇ ) called falling-rising or low tone 马 mǎ
fourth tone ( ˋ ) called falling or high-falling tone 骂 mà 
plus neutral tone!  吗 ma
If you want to practice your tones and listen to it, I can recommend you this website: Introduction to Tones. 🗣  say initials and finals at loud, 🗣  say at loud every word you learn - multiple times!  🗣  try to record yourself and listen to your audio, 🗣  if you have Chinese friends - send them your audio or try to speak with them, and ask for corrections!  🗣  if you don’t have Chinese friends - you can always send audio to apps like HiNative, HelloTalk or Tandem and see how natives are reacting on your Chinese! 🗣  if you want - you can get Chinese classes - for beginners, it’s a smart move, in my humble opinion (or get a teacher on iTalki).
Characters 汉字 (Hàn zì)
Chinese is a special language because it has characters - not letters. Each character has its own reading and meaning! 
For better understanding them, I would like to recommend you to think about them as small pictures!  There are two types of writing Chinese characters:
traditional  媽 麻 馬 罵 嗎
simplified  妈 麻 马 骂 吗
The traditional one is used in Taiwan and Hongkong and simplified one is used in Mainland China. You can see that the traditional one are more complicated and have more lines!  In the beginning, I’d recommend you to learn 100 most common Chinese Characters. Try to write characters as many as you can - at the very beginning, it’s very important to get used to a new way of writing! 
When you are already more advanced and you easily remembered 100 characters, you can read about Radicals - they will help you to understand more advanced characters and how they are constructed. 
📖  You can definitely check the book by James Heisig “Remembering the Hanzi”. He had a cool idea of how in an easy way people from outside China (or Japan/Korea) can understand and learn characters!
📝  write, write, write hanzi every day! 📝  try to post pictures of your characters on IG/tumblr or send it to someone who knows how to write them, so they can check it for you and tell you how to improve! 📝  at the beginning every character looks crappy - it’s normal!

You are at the beginning of the journey with Chinese, so I will not talk a lot about the Chinese Proficiency Test (汉语水平考试). The basic thing you should know, there are 6 levels (at the moment there are 6, but they are planning to add 3 more levels for more advanced learners). Each level has a list of characters, words and grammar points you have to know.  Don’t bother yourself with HSK exams if you don’t need at the very beginning. I haven’t touch HSK 1, 2 and 3 - I was just studying with my textbooks and I ended up at HSK 5 somehow! :D

At the very beginning, I can recommend you to invest in a textbook. I know a lot of people want to learn for “free” and not to spend a single $… You can always check if your local/academical library has any textbooks! I am a textbook-person, I need at the beginning of any language some books to make myself “into” the language, to feel it and understand basics.  Two series of textbooks to Chinese I know and tried are: 
New Practical Chinese Reader
Boya Chinese.
Personally, I am a fan of New Practical Chinese Reader. I used NPChR tom 1, 2, 3 and now I’m working with 4th tom!   If you already know that you want/need to prepare to HSK exam, then I highly recommend series:
HSK Standard Course! 
HSK Vocabulary Book (mini-series). 
APPs
Below I’ve mentioned few of apps that I recommend and they are perfect for the start! 
📱 Memrise - this app was with me at the very beginning and I still use it! The perfect tool to remember new vocabulary/sentences! There are plenty of official courses created by Memrise app, but also courses made by other users. Official courses have short videos with native speakers, which is a really nice bonus because you can hear REAL people :] 
📱 SuperChinese - a very solid app which is going to introduce you to the Chinese language world! They have real-life conversations, teach how to write characters, a function of speech recognition (so you can practice your pronunciation and tones) and many many more functions. Download it and you will not regret it!  📱 Pleco - Chinese-English, English-Chinese dictionary and life-saver. I don’t know any Chinese learner who doesn’t use this dictionary, seriously!  
📱 HelloTalk, HiNative, Tandem - all these three apps are good to meet natives! You can find folks from China and talk with them! Personally, I used them a lot at the very beginning. I wanted to see how natives are texting and make some new friends! 
📱 APPs (beside Memrise) that help you to learn vocabulary: Anki, Quizlet.

动物的叫声 / animal sounds!
langblr challenge 3 / 30 what sounds do animals make in your target language? (eg. in English, cats say “meow” and cows say “moo”)?
dog (狗 gǒu)               -   汪汪 (wāngwāng)
cat (猫 māo)               -   喵 (miāo)
cow (牛 niú)                -   哞哞 (mōu mōu)
rooster (公鸡 gōngjī)   -   咯咯 (gēgē)
bird (鸟 xiǎo niǎo)       -   叽叽 (jī ji)  or  喳喳 (chāchā)
duck (鸭子 yāzi)          -   呱呱 (guāguā)  or  嘎嘎 (gāgā)
sheep (羊 yáng)          -   咩咩 (miēmiē)
mouse (老鼠 lǎoshǔ)   -   吱吱 (zhīzhī)
frog (青蛙 qīngwā)      -   呱呱 (guāguā)
i think it’s interesting how a lot of the characters for the sounds are written like the character for the animal, but with a 口 radical (eg. 猫/喵, 羊/咩, 牛/哞)
