Hi, thank you for asking!

I generally believe that Shizuo is constantly going through a lot of psychological pressure so him snapping seems like a thing that might have happened. Shizuo is percepted as a monster by many due to his strength, making it hard for him to properly fit in. He has a circle of friend, of course, but it seems utterly hard to find anyone outside of this circle. Along with that allegations against him are not unreasonable and he understands it. So there are two paths, there is one where he fights and tries to prove he is a better person or where he gives in and shows what he really is capable of.

In dark au {Now probably will be named A Happy House AU} Shizuo snaps after Izaya sets him up again making the blond hurt someone. The phrase "Come meet your monster" is basically Shizuo understanding that Izaya never trully saw that side of him. Others might during fights, but Izaya is yet to face the nightmare that is Shizuo's head.

In this au Shizuo is sadistic for many reasons.

Part of him has a broken understanding of pain, since he himself barelly can feel it. So other's pain does not register the same.

Second important thing - Shizuo enjoys Izaya's pleas to stop along with him looking broken because at those moments he feels in control and also feels needed. He feels like he can finally fix someone after breaking them. That leads to a circle - Shizuo hurting Izaya just to soothe him and start over again.
