Training with Lance
Kevin and I are starting training with Lance. He is a cookbook that we are making food from.
Last night we made Lance’s burschetta chicken. Yum!
Marinade chicken in Italian seasoning, 2T lemon juice, 2T balsamic vinegar, 1T olive oil, 1/2 t garlic powder, salt and pepper for an hour. Then bake for 30 minutes or so until done. Top with salsa.
Tonight is New Year’s Eve. We are having Lance’s buffalo burgers.
1 lb of 93% fat free ground turkey mixed with 1/3c BBQ sauce (I am using Uncle Joe’s Tangy BBQ sauce), 1/2 package of crumbled gorgonzola, 3/4c panko bread crumbs. Shape into 6 patties and grill to desired doneness. I will let you know what we think.
I am also making the rolls I made for Christmas that everone liked. King Arthur Soft White Dinner Rolls.
I wasn’t going to make dessert, but now I am rethinking.

Christmas Dinner
So much of Christmas dinner was the same as always --
Turkey roasted Mashed potatoes -- skin on Stuffing -- brownberry with about 1/2 the water
For sweet potatoes, I can’t find the recipe I used, but it had brown sugar and butter melted and cooked on the stove for 45 minute. Then it was poured over the potatoes. The kids and Kevin like this kind of sweet potatoes. I wish they didn’t have so much sugar, but a sweet potato is a sweet potato, right?

Christmas Morning -- Brioche Cinnamon Rolls
This is my new go to cinnamon roll recipe! I am a King Arthur Flour loyalist, but this is one exception to that rule.

These are easy, first of all. Make them a day ahead and refrigerate overnight. Then bake in the morning. They are not at all healthy -- 14 T of butter! -- but they are very tasty. I don’t usually let myself eat cinnamon rolls, but these were worth the indulgence.

Christmas Eve Appetizers Galore
For Christmas Eve dinner, I took my lead from a friend, Amy Z, and went over the top with appetizers! It was really fun. The goal was to make healthier versions of some classics. 4 Thumbs Up possible but remember one of the voters is 8 years old and doesn’t have much range in food. So really this is out of 3.

3 Thumbs Up! I used button mushrooms because I wanted something a little more mild for Beth and I used turkey sausage because I try to stay away from pork. Overall really good. They were watery after being baked but when I took them out of the pan but they were just fine.

2.5 Thumbs Up! These were good. They were tied with the stuffed mushrooms for Beth’s favorite. Kevin at first thought they weren’t gooey enough, but then changed his mind. I was worried they would be too spicy, but all who tried them thought they were good. I only gave them a 1/2 star because I thought they could have been spicier. The panko also didn’t stick quite as well as it might have. I pretty much followed the recipe. My jalapenos were pretty big so I only made 11 or 12 poppers instead of 24. I probably overstuffed a little too because I was worrying about the heat.

2 Thumbs Up! These were good and so easy. I would do a slightly different filling next time. They mayonnaise wasn’t my favorite but I will eat the left overs for sure. I might try the recipe from PopSugar to see if the filling is better. But the concept is a keeper! Beth wasn’t a fan but these were Kevin’s favorite.

3 Thumbs Up! This was good and I like that it goes in the crockpot so I can get it ready early, but it got pretty think. I might have needed to heat it back up. It was really chickeny. Next time, I will use less chicken, I think.

3 Thumbs Up! I was the odd person out on theses. They were the only thing the 8 year old liked. I used turkey sausages. I had no idea these were a thing until we went to a party a few nights ago.
Overall, the evening was a success. We will definitely do this again.
