Meethi Seviyan or Meethi Sewai is an easy to make Indian sweet that is mostly made during festivals. This sweet vermicelli recipe uses very few ingredients and can be made in less than 10 minutes. Sweet Sevai is a traditional recipe of sweet which is easier and more efficient to make. It is a recipe which is most preferred during the festival. Meethi Seviyan also known as Sweet Vermicelli is a must during festival time at my place. It is a delicious Indian recipe served as a desert. This is popular dish at my home can be served as a sweet after lunch or dinner, sometimes I didn't wait for any occasion will make it to fulfilled my sweet cravings. This is rich and easy sweet recipe which can be made in few ingredients which is available in my kitchen most of the times. This is dry version of meethi seviyan, you can add milk in replace of water, me and my husband liked both one. It is just as delicious as it is easy to make. They taste so delectable that you’ll fall in love with this dessert. In this recipe, I have used roasted thin seviyan/vermicelli for the pudding, plus I fried it again just to ensure even browning, which gives it a nice aroma, golden color and its signature taste. Sweet Vermicelli is a scrumptious, yummy and rich pudding that is completely delighted in India and Pakistan. In North India, UP this pudding is known as meethi sevai and is very popular in awadhi cuisine too. Ingredients : Vermicelli / Seviyan - 200 gram Sugar - half cup Water - 1.5 cup Cardamom - 2 pcs crushed Almonds - 8 to 10 crushed Cashews - 8 to 10 crushed Raisins - 10 to 12 Ghee - 4 tbsp Method : 1. Roast the dry fruits in 2 tbsp of ghee until golden brown. 2. Add some more ghee to the same pan and roast the vermicelli until golden. 3. Add the water to the roasted vermicelli and cook until the water is dried off. 4. Add sugar and cook until it blends totally and the syrup is absorbed by the seviyan. 5.
