Yesterday’s lunch didn’t look very exciting but it was so delicious 🤤! Bell peppers stuffed with leftover red lentils cooked with carrots, zucchini, tomato paste, garlic and a whole lot of spices 🙆♀️ and baked in the oven along with some potato wedges 👌. So many of you were interested in how I made these crunchy tofu cubes so I decided to share it as a post as well ☺️! I love buying fresh tofu at my local Asian supermarket (less plastic, less expensive and more delicious!) and freeze some of it to avoid it from going bad. Therefore I cut it into cubes (or any other shape), put it into a container and place it into the freezer. I would recommend freezing serving sizes of tofu because it can be difficult to take the individual pieces apart while frozen. When you’re ready to use the tofu you can either let it defrost in the fridge or pour boiling water on top of it (make sure your container is safe for that). After draining your tofu you can spice it if you wish and put it into your oven or - in my case - an airfryer 🙌. I love eating crunchy tofu as a side but you can also use it in soups, stews or curries for a change in consistency. Guess who treated herself to an #airfryer last week and didn’t make a single meal without using it since then 😁 (🙋🏼♀️). My potato consumption was high before but it honestly rocketed this past few days 😅. At least I’m not eating potatoes by themselves (all the time) 🥔. Yesterdays lunch (and my first post in WAY TOO LONG, I‘M SO SORRY)🌿! Oven roasted potatoes, carrots and horseradish on top of arugula salad 🤤.
