Apple Muffins

Prep Time : 1hr 15 mins
Cook Time : 30 mins
Makes 24 muffins 
  Ingredients :
- 4 cups Diced & peeled apples
- 2 cups sugar
- 1 cup applesauce
- 3 cups flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 2 eggs
 Directions :
1. Preheat oven to 325F. Line two muffins trays with liners.
2. Mix apples and sugar, set aside for 1 hour.
3. Add dry ingredients to applesauce, stir in eggs.
4. Fold in apple mixture. Place into muffin cups ( or loaf pan) and sprinkle with sugar.
5. Bake for 30 minutes. ( if your making it into a loaf bake for an hour )

Chocolate Crack

Makes a full cookie sheet
 Ingredients :
- soda crackers ( salted)
-  1 cup brown sugar
-  1 cup butter
-  1 cup milk chocolate chips ( melted)
Directions : 
1. Preheat oven at 400F. Spread crackers out on parchmenet paper lined cookie sheet.
2. Bring butter and sugar to a boil on stove top.
3. Pour over crackers, spread out evenly.
4. Bake for 10 minutes.
5. Reduce heat to 350F. Spread melted chocolate chips over crackers.
6. Bake for 5 minutes.
7.  Freeze until frozen. Break into pieces.

Tomato Basil Olive Muffins

Prep Time : 10 minutes
Cook Time : 15 – 30 minutes
Makes 12
 Ingredients :
- 2 ½ cups of all purpose flour
- 2 tsp baking powder
- ¾ cup of milk
- 2 eggs
- 6 tbsp butter, melted
- 2 tbsp plain yogurt
- 14 cherry tomatoes, halved
- 1/3 cup halved and pitted black olives
- 3 ½ ounces of feta cheese, crumbled
- 2 tsp fresh basil
- Handful of fresh basil leaves
- Salt and freshly ground black pepper
 Directions :
1. Preheat oven to 350F. Line a 12-cup muffin pan with paper liners. Sift flour and baking powder together in a large bowl, season with salt and pepper.
2. In a large bowl place, milk, eggs, melted butter and yogurt. Stir with fork until well combined. Pour into flour and mix together.
3. Fold in tomatoes, olives and feta and dried and fresh basil. Divide batter evenly among liners.
4. Bake 15 – 20 minutes, until golden and springy. Garnish with fresh basil if desired

Cake Batter Waffles

Prep Time : 10 minutes
Cook Time : 15 – 20 minutes
Makes 12
Ingredients :
- 3/4 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 3 eggs
- 3/4 tsp pure vanilla extract
- 1/4 tsp almond extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- Toppings: whipped cream, chocolate sauce, sprinkles, fresh fruit or anything you want!
Directions :
1. Warm waffle iron on medium heat as you prepare the batter.
2. Cream together the butter and sugar until light and fluffy, at least 3 minutes. Scrape down the sides of the bowl as necessary.
3 Add the eggs, one at a time, mixing well.
4. Add the vanilla and almond extract.
5.  Mix the flour, baking powder, and salt together in a separate bowl. Add the flour mixture to the batter in three batches, alternating with the milk, until fully incorporated. Add sprinkles to the batter at this point, if you want.
6. Scoop 1/2 cup (this amount will depend on the size of your waffle iron) of batter into the waffle iron, and close the lid. Let cook for about 3 minutes, then carefully remove the waffle. Upon removal, the waffle will be very soft and fragile; however, it will crisp up after removal.
7. Serve with toppings as desired: whipped cream, chocolate sauce, fruit, sprinkles, etc.

M&M Cake Batter Cookies

Cook Time : 20 min
Makes : 24 cookies
 Ingredients :
- 1 box of cake mix (any kind - we used Betty Crocker Golden cake mix)
- 2 eggs
- ½ cup of butter softened
- 1 cup M&M’s
 Directions :
1. Preheat oven at 325F.
2. Combine cake mix, eggs and butter together.
3. Mix in M&M candies
4. Roll dough into 1-inch balls on cookie sheet, lined with parchment paper. Be sure to leave space for spreading

Turkish Eggs

Makes 8
 Ingredients :
- 8 poached eggs
- 1 ½ cups tzatziki sauce
- 2 tsp paprika
- 2 tbsp butter
- 1 pk Pillsbury crescent rolls‬
- fresh dill
Directions :
1. Preheat oven at 350F. Roll out crescent roll dough, cut into squares and place into muffin tray to form cups to hold egg. Bake for 15 minutes.
2. Poach eggs.
3. Melt butter and stir in paprika.
4. Spoon tzatziki sauce into bottom of freshly baked cup. Place poached egg on top, drizzle paprika butter and sprinkle with fresh dill.

Spinach Ricotta Muffins

Total time : 25-30 min
Makes 30 bars
Ingredients
• 3 ½ ounces of baby spinach
• 1 ½ cups + 2 tbsp all purpose flour
• 1 ½ tsp baking powder
• 1 ¼ cups grated Parmesan cheese
• ½ tsp ground nutmeg
• 1/3 cup + 1 tbsp buttermilk
• 1/3 cup + 1 tbsp vegetable oil
• ¾ cup ricotta cheese
• 2 eggs
• ¼ cup toasted pine nuts
• salt and freshly ground pepper
1 Preheat oven 350F.  Line 12-cup muffin pan with paper muffin liners.
2 Boil water. Place spinach in a large bowl, cover with enough water ( previously boiled) to cover. Let sit for 1 minute. Drain off water and press out any excess. Chop spinach.
3 Sift flour and baking powder together into a large bowl. Stir in 1 cup of Parmesan cheese, nutmeg and season with salt and pepper.
4 In a large bowl, mix the ricotta cheese, buttermilk, vegetable oil and eggs. Stir, until well combined. Pour in dry ingredients, along with chopped spinach and pine nuts - mix together.
5 Divide batter evenly between muffin liners and sprinkle remaining Parmesan cheese. Bake for 25-30 minutes until golden and springy to touch. Transfer to wire rack to cool.
6 Serve warmed with butter

Raspberry White Chocolate Blondies

Total time : 50 min
Makes 16 bars
 Ingredients
- 1 cup all purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup of white chocolate
- ¼ cup butter, softened
- ½ cup + 2 tsp sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup raspberries
Directions
 1. Preheat oven at 375F. Make a foil sling for an 8-inch square baking pan by folding 2 sheets of foil so each is 8 inches wide. Lay sheets of foil in pan perpendicular to each other, with extra foil hanging over edges of pan. Grease foil.
2. Whisk flour, baking powder, and salt together in small bowl. Roughly chop 3 ounces chocolate and microwave in bowl at 80 percent power, stirring often, until melted, about 1 minute. Chop remaining 3 ounces chocolate into ½ inch pieces
3. Using stand mixer with fitted paddle, beat butter and ½ cup sugar on medium-high speed until pale and fluffy, about 3 minutes. Add egg and vanilla and beat until combined. Add melted chocolate and mix until incorporated about 30 seconds. Reduce spped to low and slowly add flour mixture until combine, about 45 seconds. Stir in all but 2 tablespoons chopped chocolate
4. Transfer batter to prepapred pan and spread in even layer. Toss raspberries with remaining 2 teaspoons sugar to coat and gently press into batter spaxing evenly apart. Bake until edges are puffed and golden and toothpick inserted in center comes out with few moist crumbs attached 25 to 35 minutes.
5. Let bars cool completely in pan on wire pack, about 2 hours. Using foil. Remove bars from pan. Microwave reserved chocolate in bowl and drizzle over entire surface of bars. Cut into 16 pieces.

Ginger Crinkle Cookies

Makes 36 cookies
Ingredients
2/3 vegetable oil
1 cup white sugar
1 egg
¼ cup molasses (fancy)
1 ¾ cup all purpose flour
2 tsp ginger
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
½ tsp salt
Directions
Wisk oil and sugar, together. Add in egg and molasses – mix well.
Combine flour, ginger, cinnamon, baking powder, baking soda and salt. Add in oil, sugar, egg and molasses mixture.
Mix dough (you will have to use your hands as dough is too dense for a mixer). Leave dough in bowl. Cover with plastic wrap and chill dough overnight in fridge ( you can leave longer if needed)
Roll batter into balls of desired size. Roll each ball into white sugar. Place on parchment paper about 1 inch apart, to leave room for spreading.
Bake at 375F for 8 min. Cookies will appear “puffy” at first, this will go down as they cool.
