Savor the decadent, chocolate-flavored delight of these gluten-free, Paleo-friendly donuts. They have a rich chocolate frosting on top, are devoid of nuts, and make a guilt-free treat.
Ingredients: 1/2 cup coconut flour. 1/4 cup cocoa powder. 1/4 cup arrowroot flour. 1/4 cup coconut sugar. 1/4 cup melted coconut oil. 3 large eggs. 1/4 cup unsweetened almond milk. 1 tsp vanilla extract. 1/2 tsp baking soda. Pinch of salt. 1/4 cup dairy-free chocolate chips.
Instructions: Preheat your oven to 350F 175C and grease a donut pan with coconut oil. In a large mixing bowl, combine coconut flour, cocoa powder, arrowroot flour, coconut sugar, baking soda, and a pinch of salt. In a separate bowl, whisk together the melted coconut oil, eggs, almond milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the chocolate chips. Spoon the batter into the donut pan, filling each mold about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into a donut comes out clean. Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. While the donuts are cooling, you can prepare the chocolate frosting. For the frosting, melt 1/4 cup of dairy-free chocolate chips in the microwave or using a double boiler until smooth. Dip the tops of each donut into the melted chocolate to coat them. You can also drizzle the chocolate over the donuts if you prefer. Place the frosted donuts back on the wire rack to let the chocolate set. Once the chocolate has hardened, your Paleo Chocolate Frosted Chocolate Donuts are ready to enjoy!
