I’m a cake lover, especially for black/rum cake. It’s getting close to Christmas and the thought of me eating this cake came to mind. I love when this is made because it brings back memories of what my Christmas was like growing up.

They taste so good, and are easy to make! All you have to do is dip the Oreo's in pancake batter and fry it in hot oil.
I would eat them all the time, but they’re so unhealthy :(

Buttermilk pancakes! A great away to start the morning or even just eat throughout the day. There pancakes are soft, warm and very delicious. I could eat these all day and not get tired of them. All I need is a large glass of chocolate milk!

McDonald’s Review
For over a year, I haven’t eaten any food from McDonald’s. I only buy their drinks. The meat is so processed, and it’s chewy and fake. There is no flavour in their beef. If you compare a McDonald’s burger to a Harvey’s one, you will immediately taste the difference in the quality.

Guyanese cheese straw
Cheese straw is a thin strip of cheesy pastry and is eaten as a snack.

Ingredients
6 oz butter
8 oz flour
8 oz (2 cups) grated cheese
½ tsp salt
½ tsp pepper, optional
1 tsp. mustard
2 eggs, separate yolks from white (optional)
¼ cup cold water
Instructions
Rub the butter into the flour and mix. Add the grated cheese, salt, pepper and mustard and mix thoroughly.
Add beaten egg yolks and cold water to make a stiff dough. Eggs are optional.
Roll out about ¼ in thick. Cut into strips or make into any desired shape.
Place the straws on a baking sheet and bake at 400°F for about 15 minutes, or until golden brown.

Guyanese Salara (Coconut Roll)

If u like coconut  then you should definitely try this coconut roll or what we call salara in Guyana. 
Ingredients:
1 tbsp dry yeast
¼ cup warm water
¼ cup sugar
1 cup milk
¼ cup shortening
1 tsp salt
3 cups flour
1 egg, beaten
1 tbsp butter
1 egg white
Filling
1 cup shredded coconut (sweetened) if you’re using an unsweetened coconut increase sugar from 1/4 cup to 1/2 cup
1/4 cup sugar
1 tsp cinnamon
1 tsp vanilla essence
2 tbsp water
5 drops of red food coloring (or until it gets to the desired colour)
Instructions:
Dissolve the yeast in warm water. Sprinkle with 1 teaspoon of sugar. Mix and leave to stand.
Warm the milk then set aside. Combine the salt and sugar with the flour, add shortening into the flour mixture then add the yeast, and egg. Pour the milk in and knead to make a moderately stiff dough. Shape into a ball.
Place the dough in a greased bowl. Cover and leave the dough in a warm area to rise for about 1 hour. Combine all the filling ingredients and set aside.
Divide the dough in half. Roll each half into a rectangle and brush with melted butter.
Sprinkle the filling evenly on each of the rectangles. Fold the sides in and roll up lengthwise. Ensure the edges are sealed.
Leave to rise in warm area.
Brush the rolls with beaten egg white. (optional)
Bake at 350°F for 20 – 30 minutes. Until the tops are brown
Cut into slices and enjoy.
You can add extra milk if you do not use egg.

Jamaican Curry Goat with Rice and peas. This is my favourite dish that my mother would make on Sunday for our dinner. The steaming goat meat would melt in your mouth once it’s freshly made and it’s even better when the gravy mixes with the rice.

Jamaican Cornmeal Porridge Recipe 
Ingredients 
1  cup Yellow Cornmeal (coarse or fine) 4  cups Water ¼  cup Milk (or Half and Half) ½  cup Sweetened Condensed Milk 2  tbsp. Sugar ¼  tsp. Nutmeg (ground) ¼  tsp. Cinnamon (ground) 2  drops Vanilla Flavoring 
Method
1. Add cornmeal to a bowl, and then pour enough water into the bowl to cover the cornmeal. 2. Use a fork to mix the cornmeal in the bowl to let the water and cornmeal mix loose and watery. 3. Bring the 4 cups of water to a boil in a saucepan and turn the heat to medium. 4. Slowly pour the water and cornmeal into the saucepan while stirring with a fork. You will have to stir the mix continuously for about 3 minutes. 5. Make figure eight patterns if you like as this will stop the cornmeal from forming lumps. Note: Be careful from this point on because the porridge will splash and burn your hand if the heat is too high. 6. Turn the flame down even more if the splashes from the pot become large. 7. Cover the pot and let simmer for about twenty minutes and occasionally stir the mixture in the pot. 8. Turn off the flame but do not remove the pot from the stove. 9. Now add all the remaining ingredients, except the nutmeg. 10. Stir to sweeten this Jamaican porridge and then taste it. 11. Add more ingredients of your choice to get the desired taste. 12. Serve in small bowls and sprinkle with the ground nutmeg. Note: If you are not able to digest milk (lactose intolerant) you could substitute soy milk for regular milk in this Jamaican Cornmeal Porridge. If you would like to go strictly "Ital" with this porridge, you know, the real Rasta man style, then you can remove the sugar, ground cinnamon, and all milk products. Replace the milk and half & half with coconut milk, the sugar with honey, and the ground cinnamon with cinnamon leaves. These are suggested substitutes! Note though that this "Ital" Cornmeal Porridge will taste a little bit different from the real flavoured, regular type. So make your adjustments carefully. Whatever your choice for this Jamaican cornmeal porridge recipe though, ENJOY!!
