Salami veggie stew with mangu!

Ingredients: salami induveca (the dominican brand smoked beef that usually go for like 6-7 bucks), tomatoe sauce, freshly cut onions, green and red peppers. At least 4 olives and 2-4 caps of vinegar, salt and brown sugar to your liking (i usually go with like 1 small tablespoon of each if it’s just for me)

Details: I know I don’t have it up there like this but the first thing I really do is start boiling the plantains in high heat. Once they look like they’re almost done (so about 20 minutes into it boiling) I start cutting up the veggies (onions, olives, red and green peppers - no garlic! it’ll throw it off and make it taste like an italian pasta.. bad experience cause im picky and need it to taste exactly like mama makes it lol) and the salami; which I cut into little cubes leaving about 4-5 bigger ones to munch on later. Then I let the veggies heat up with the oil in high heat until they get nice and soft but dont let em get burnt. Add the tomato sauce and salami and let it sit in high heat. Check your plantains make sure they got enough water and the heat aint too much. By now they should be about done and ready to mash while the salami and veggies continue to get their taste into the sauce. Add little water to the sauce so it’s not too too thick. Bring the heat down. I like to add plantain water so I don’t need to use too much butter (but for this one I kinda went in on the butter lol the ratio is really up to your liking if you wanna keep it healthy use more plantain water and a bit of sea salt to give the plantains more taste but remember the sauce itself will handle it). Turn the heat off on the sauted salami and serve, enjoy! :D

Special ingredient missing: Avocado! they make this meal sooo complete and balance some of the stronger tastes, I really recommend it together!
