. TACOS DE TINGA Yes, I love cooking. I made chicken tinga tacos (my favorite dish). Wonderful shredded chicken in a tomato chicken broth. 📸by me. I highly recommend this recipe and so easily executed through Enrique Olvera’s book TU CASA MI CASA (Phaidon Publishing). The recipes in this book are fantastic and not too difficult. However if you want to up your game look into his upper scale recipes from MEXICO FROM THE INSIDE OUT (Phaidon Publishing). . The Crested Partridge AKA...Crested Wood Partridge, Roul Roul, Red Crowned Wood Partridge, Green Wood Quail or Green Wood Partridge. Found in the lowland rainforests in south Burma, south Thailand, Malaysia, Sumatra and Borneo. It’s evaluated as Near Threatened on the IUCN RED LIST of Threatened Species. . HUNT & BRONC Throwback Thursday Yep, that’s my pal Walton Goggins. We met on the set of Cowboys and Aliens. That’s where our bond began. You couldn’t ask for a more giving person. And let me tell you, he knows a thing or two about humility. He came off several hit shows and films to be hand picked by Jon Favreu to join a star studded cast. He played Hunt and I played Bronc. He was patient, grateful to be working and extremely observant. Why? Because his role and mine were as thin as one ply toilet paper. But he carved out a memorable role by checking any kind of ego at the door in spite of the powerhouse actors on set. All the actors treated us with respect but Walton knew how to affect others with ideas, his improvisational skills and his intellect. I knew Walton was special. The guy is immensely talented with profound range. But more importantly, I remember his humanity. We spent many hours talking about love for family, our own personal cultures and honoring our craft. My pal Walton deserves everything he has nurtured because he’s proved it with actions and not just words. So today I raise a shot of mezcal in honor of my amigo! And yes, I followed his lead on the film, making sure I was having fun knowing we were living our dream no matter what. . 𝗪𝗘 𝗟𝗢𝗦𝗧 𝗔 𝗟𝗘𝗚𝗘𝗡𝗗 𝚆𝚒𝚕𝚕𝚒𝚊𝚖 “𝙱𝚒𝚕𝚕” 𝙳. 𝚆𝚒𝚝𝚝𝚕𝚒𝚏𝚏 𝟷𝟿𝟺𝟶-𝟸𝟶𝟷𝟿 Sadly a phenomenal renaissance man died two days ago from a heart attack. I’ve been following Bill Wittliff since he helped produce and write the television series LONESOME DOVE (he also wrote 𝗧𝗛𝗘 𝗣𝗘𝗥𝗙𝗘𝗖𝗧 𝗦𝗧𝗢𝗥𝗠, 𝗟𝗘𝗚𝗘𝗡𝗗𝗦 𝗢𝗙 𝗧𝗛𝗘 𝗙𝗔𝗟𝗟, 𝗕𝗟𝗔𝗖𝗞 𝗦𝗧𝗔𝗟𝗟𝗜𝗢𝗡 and many more). But I also fell in love with his amazing photographic work in two of his books 𝗔 𝗕𝗢𝗢𝗞 𝗢𝗙 𝗣𝗛𝗢𝗧𝗢𝗚𝗥𝗔𝗣𝗛𝗦 𝗙𝗥𝗢𝗠 𝗟𝗢𝗡𝗘𝗦𝗢𝗠𝗘 𝗗𝗢𝗩𝗘, and 𝗩𝗔𝗤𝗨𝗘𝗥𝗢: 𝗚𝗘𝗡𝗘𝗦𝗜𝗦 𝗢𝗙 𝗧𝗛𝗘 𝗧𝗘𝗫𝗔𝗦 𝗖𝗢𝗪𝗕𝗢𝗬. 
My daughter and I got to meet him and his wife, Dr. Sally Wittliff at an event at The Wittliff Collections at The Texas State University in San Marcos. He couldn’t be more delightful. We talked for about 15 minutes about the Mexican Vaquero’s influence on Texas culture and about several films including A NIGHT IN OLD MEXICO, a film he wrote and produced. We both have a good friend, Eric A. Williams who was a line producer on this last film starring Robert Duvall. His wife was so sweet with my daughter.
He truly inspired greatness and spread his passions far and wide. A great loss.
