jesse loves food, he loves weird stuff, lake presumably loves doing dumb shit for fun, and they get to experience all the foods they never had on the train
they get each other weird foreign snacks, lake introduces him to midwestern food, jesse gets lake to try apache recipes

sooo the fandom found some boards with new lore about reflections!
there's one new thing directly stated by lake:
when a prime dies, they're replaced by an "inert," who's not alive like other reflections. (i wonder how fast theyre replaced? if the reflection has to play dead until the body isn't by a reflective surface and they can be replaced?) technically, this one line is missing from among other lines that made it into the show, so there is a chance they took it out because they decided it wasn't canon anymore
everything else is implied, like lake suggesting reflections probably don't need to eat
(my logic being that anything that needs to eat to survive probably feels hungry, even if that sensation may feel different to them)
lake enjoys food!!! not surprising, i wonder if they'll enjoy less as it becomes not new anymore, or if that's something they'll always enjoy. but them being able to eat (in my opinion) implies that they do have organs, and yes, jesse, probably can go to the bathroom if they eat. (@jesse-cosay pointed that out first lol)
and, while we all pretty much gathered this anyway, lake does mention that they're pretty sure no reflection has ever made it off the train:
(also, don't mind me being sad about all the escaped reflections who were murdered before they ever got to live. and lake's definitely thinking about that, too).

Lake listens carefully and nods at his points but the resolution is just: huh I never thought about that before. I actually have no idea.

I love that the fandom has come to associate Jesse with loving vampires. We have like, one picture of him and his brother dressed as vampires for Halloween, and he frequently names animals Dracula. Thats it.
Yet we have collectively decided he knows ALL the vampire lore

This might be obvious, but I feel like it's often misunderstood about Jesse's character.
When confronting the Apex and running away with Lake, his number does not change. They don't get his exit right away, it doesn't appear after this dramatic moment of him standing up for himself and his friend.
"But Yellow! It's about the pacing! It's about the drama of them running away!"
Wrong!
For one, Jesse's problem isn't that he can't stand up for himself. Because he can! And he shows us this!
"It looks like your punching wasn't doing much good either."
"I was yelling! It's still my turn to yell!"
He talks back after Lake mocks his approach. He puts his foot down and defends himself.
"Pft. You would."
He antagonizes Lake after the flecs outted them as a criminal. He doesn't bend to Lake's whims like someone who's spineless.
"You better not tell mom!"
He doesn't grovel for Nate not to tell their parents. Doesn't promise to make it up to him later, doesn't try to lighten this blow at all. The way someone would if they always played both sides.
Defending himself is not his problem, not really. It's not even just people-pleasing.
"Don't tell me what to do!"
"I'm not gonna be a part of anything like this. On or off the train!"
If it was? This would have been the scene Jesse got his exit. There's enough build up for it, we don't need the chase scene before it, we could still have the flex show up after Jesse's exit closed with Lake on the other side.
But it isn't.
"I've got you. We're getting out of here."
It's only after he reassures Lake that his number changes. After he promises to stay with them, to side with them.
Jesse's issues were about standing up for others. For defending other people, even when it wasn't convenient. Not about him.
