Sweet Potato Tahini Crostini | Love and Lemons

This sweet potato spread – it’s halfway to hummus. It’s thicker and has a stronger tahini flavor, which was a nice contrast to the light & airy ricotta. It’s also a convenient way to use up a bit of leftover baked sweet potato and a partial can of chickpeas. Which were the lazy-person ingredients I happened to have on hand.

Sweet patatoes fries. It is so easy! For 2 persons: 2 sweet patatoes Olive oil Salt and pepper A bit of cayenne pepper Preheat your oven at 220°C Cut the sweet patatoes into thick fries Mix them in olive oil, salt and pepper You can add some cayenne pepper Place the fries on baking paper Cook them for 20 min, they need to be soft and golden at this stage Take them out of the oven, turn the fries on the other side and back in the oven for another 20 min And tatatah!!!! Home made sweet patatoe fries!
