There are two stages in sharpening a knife with Chef’s Choice - the coarse and honing stage. This stage uses 100% diamond abrasives to give an angle to the blade edge. Next is the polishing and honing where extremely small diamonds provide a polished face to the cutting surface. Guides held in place by coil springs provide assistance to keep the blade in position for the correct sharpening angle. And maintenance is easy; the sharpener cleans with a wipe of a rag.
For a two-stage Chef’s Choice sharpener, model 316 could strike a balance between price and performance.
