Grandma Cookie's Chocolate Chip Cookies
Recently I had a friend going through a hard time and reached out to her grandma to get her PERSONAL chocolate chip cookie recipe. She said I was able to share this recipe with anyone BUT her granddaughter. After a test bake here is what I figured for the recipe.
Ingredients
- 3 cups all-purpose flour
-1 cup granulated sugar
-1 cup light brown sugar
-1 cup salted butter (2 US sticks)
-2 cups (one 12oz package) semi-sweet chocolate chips
-2 large eggs
-1 teaspoon vanilla extract
-1 teaspoon salt
-1 teaspoon baking soda
-2 tbsp warm water
Instructions:
*note: this recipe is being written assuming you have some kind of mixer. I imagine mixing this by hand would be quite the workout.
*note 2: allow butter to soften by leaving out of the fridge for atleast 30 minutes before using. Do NOT microwave to soften/melt
*note 3: this recipe can be prepared in about 15-20 minutes but benefits from allowing the finished cookie dough to sit in the fridge overnight. Not required but may effect bake times and texture.
Recipe yields approx. 4 dozen cookies (48)
1. Preheat oven to 350 degrees F
2. Combine 1 teaspoon baking soda with 2 tbsp warm water. Mix until dissolved and set aside.
3. Mix flour and salt in a bowl.
4. Beat 2 eggs in a small bowl.
5. In mixing bowl combine 1 cup butter (2 sticks), 1 C granulated sugar and 1 C brown sugar until whipped and creamy.
6. Slowly add beaten eggs to your butter and sugar mixture until combined and smooth.
7. Slowly add baking soda and water solution to your eggs, butter and sugar.
8. Slowly mix in 2 C chocolate chips.
9. Line a baking sheet with parchment paper.
10. Using a tablespoon, measure out approx. 8 rounded balls of dough and place evenly apart on a parchment lined baking sheet. (Each ball of cookie dough should be approx. 1 rounded tbsp. Reminder: You will have about 40-50 cookies in the end)
10. Lightly hand press each ball of cookie dough into a puck shape
-Editors Note: it took me between 14-17 minutes to get a cookie I felt happy with. The bottom of your cookie should be an even, warm brown. The surface will have some cracking, and an even brown color. The cookies will puff up while baking, but flatten as the near completion. Initially check your cookies at the 9 minute mark, but adjust according to what you observe with your personal oven.
11. Place into the oven for approx. 9-11 minutes.
12. Remove from oven and place on a wrack to cool, before placing into the final container.
