My favorite way to eat a courgette is to slice it finely into ribbons using a speed-peeler. Once marinaded in lemon juice, garlic, olive oil, salt and pepper, I then fry it until it goes soft in foaming butter. It is delicious tossed in spaghetti but tagliatelle bears a textural resemblance to the sashes of green.
