Culinary innovations -convection microwave
A convection microwave is a combination of a standard microwave oven and a convection oven. It allows food cooked in the convection microwave to be cooked quickly, yet come out browned or crisped as in a convection oven. However, most cakes cannot be baked in a microwave oven - only those without an open grain structure, such as brownies. There are microwaves which contain electric browning baking elements. A true convection microwave has a high velocity forced-air fan to circulate the hot air uniformly. Convection microwave ovens were initially considered to be high-end kitchen appliances. Over time their price has dropped, and they can be bought for around the same price as a conventional oven. However, some models do require more space than a standard microwave, because of the larger cooking area inside
This convection oven is amazing to have in the kitchen. it works faster and better than most microwaves. this oven is important because it cut the time down by half and its a two in one product, a convection microwave also browns and cooks the outside of your food. Scientifically speaking, regular microwaves emit waves that bounce around until they come in contact with food, causing water molecules to excite and generate heat, which then cooks the food

The Mediterranean Diet is not a diet, as in “go on a diet,” even though it is a great way to lose weight or improve your health. Rather, it is a lifestyle – including foods, activities, meals with friends and family, and wine in moderation with meals. Just as important, the Mediterranean Diet is full of wonderfully delicious, flavor-filled dishes and meals. It’s easy to understand what it is by thinking about Mediterranean dishes or “plates.” Examples of breakfast menu for a Mediterranean could be , oatmeal with milk , multi grain bread and cheese, or with an organe juice and a snack. examples for a lunch menu for a medtiereaan could be rice and beans/ or with legumes, corn salad, vegatbles salald with a fruit dressing. examples of dinner meant could be, salmon with rice, pesto pasta, glass of juice and An oranges sometimes a little snack. so for a week I did a experiment to do the Mediterranean diet ! Mondays mph - Oat meal alone ( breakfast) with rice with just beans ( lunch) Pesto pasta with Caesar salad eat dinner at work that night Tuesday- oatmeal with 10% cream but add a little amount of water cheese sandwich with multi grain bread and an apple juice salmon with kale. I bought the kale salad and cooked the at home with again apple juic. Wednesday- mutli grain bread with butter and glass of water/caramel tea at school quinoa salad with a sprite from work. A little late night cereal after I got hom from work ( oatmeal) am a cup of it chocolat. Thursday- plain bagel with butter and a cup of red rose tea. I had leftover lentil peas with rice amd baked chicken with a apple juice oatmeal cereal with a cup of tea , and a mango friday- multi grain bagel with cream cheese, with an apple juice chicken pasta with applied juice and a snack for dinner I will have salmon with rice and glass of fruit juice. This experie ce was great but I missed eating meat and French fries. Saldly I like a lot of drunk food. But it was a great experience

Grilled top sirloin recipe #2
Quantity Unit of measure Ingredients
2x130 g Beef top sirloin steak 20 ml Vegetable oil 2 g Thyme sprig 4 pc Crushed garlic To taste Salt and pepper
Directions 1. In a medium size stainless steel bowl mix together crushed garlic, vegetable oil and thyme. Reverse bowl in the fridge for about 3 hours
2. Preheat cast iron grill pan over medium flame until hot. Ensure that the grill pan is clean and free of debris before use.
3. Season sirloin well with salt on all sides
4. Place the sirloin steak on the hot grill 90 degrees, so the grill lines now run 45 degrees in the opposite direction ( this is called cross-hatching).cook approximately 2 minutes on each flip.
5. Turn the steak over and repeat the process, cooking the streak to appropriate doneness.
6. Allow steak to rest before slicing.

Beef jus
Quantity Unit of measure Ingredients
500 g Beef bones from different cuts from the meat 300 ml Red wine 500 ml Chicken stock, hot 500 ml Beef stock 60 g Onions, mirepoix 40 g Carrots 20 g Celery 4 pcs Garlic crushed 3 pcs Bay leaf 2 pcs thyme 10 Ml Vegetable oil To taste Salt and pepper Directions 1. Heat a medium sautuese over medium heat, add the vegetable oil. Add beef bones to the pan and begin brown. 2. Add your mirepiox to the bones adjust heat accordingly, let your mirepoix brown. 3. Transfer bones to a stainless steel bowl and deglaze pan with red wine 2-3 minutes 4. Add your HOT chicken and beef stock, bring to boil 5. Transfer your liquid to a pot and add in your bones mirepoix, bay leaf’s and thyme, bring to a boil and skim. 6. Adjust your heat and let it simmer. 7. Strain the beef jus to a china cap and reduce to a sauce consistency. 8. Season with salt and pepper.

This week doing our regular family grocery shopping at Nosse Talho butcery shop at Dufferin and Bloor, near the subway station. I told my sisters about my first blog assignment and they thought it was cool for my to choose top sirloin steak and make it for them to evaluate A top sirloin cut is from a beef carcass(part of the cow).A brief history about a cow/cattle, they are raised as live stock or meat(beef and veal),as dairy animals for milk and other diary products. According to an estimate from 2011 there are 1.4bilion cattle’s/cow in the world. The greatest percentage of cows lives in India followed by brazil. top sirloin cuts is a little different from other parts of sirloin cuts because the bone and muscle has already been removed. The top sirloin is less tender than tenderloins. Top sirloin is middle and upper part of the sirloin but excluding the tenderloin. Top sirloin can weight from eight to 18 ounces. You can pay $10-$13lb for a top sirloin steak. Steaks are always good when its fresh, so avoid leaving a steak in the freeze/wrong temperature for to long. Best way to utilize this piece of cut is to cook it off as fresh as possible while you have all that moisture and redness there. Some of the best ways to cook top sirloin steaks are, pan frying, grilled, a broiled method and roasted. They were just a few common ways that chef prepare stop sirloin.

Clear Vegetable Soup
30g Butter
180g onions Macédoine
40g leeks,payssane
125g carrot, Macédoine
125g celery, Macédoine
100g turnuip, Macédoine
1/2 colve, pure
3 stalks,parsley finely chopped
1 1/2 L chicken stock
1 ea tomato, Concassée
20g frozen peas
salt and pepper to taste, spice bag ( parsely, peppercorn, tyme)
Preparation 1. Heat the butter in a heavy 2 L saucepan over medium-low heat. 2. Add the onions, carrots, celery, leek and turnip.
3. Sweat the vegetables with the garlic in the butter over low heat until approximately half cooked. (Do not let them brown).
4. Add the stock and the spice bag. 5.
Bring to a boil and skim carefully. Simmer until vegetables are just tender.
6. Decrease the soup and season with salt and white pepper.
7. Just before service add the tomato Concassée, peas and chopped parsley

Clear Vegetable Soup
This was a soup we did in culinary essentials and I thought it was be great to document it. This soup wasn't that hard to make, the only changeling thing was keeping that soup very clear without clouds.according to my chef the trick to keeping it clear is the stock(skimming and low heat ).this was a very simple soup that anyone would enjoy eating.even though this is a vegetable soup with was also made with chicken stock so it cannot be classified as a vegetarian dish.
