The biggest difference between Alastor in the pilot and Alastor in the show is just how much more talkative he was in the pilot. Series Alastor is pretty quiet.

What if Adam respawns in hell as a sinner demon and Lute has to grapple with the fact that she cares about a 'hellspawn'.

For Adam as a character, he's a lot more interesting than people give him credit for. The angels basically made a misogynistic robot to rule their world. You can't really blame him for how he is when the angels quite literally made him to be that way. There's no environment or anything else to blame other than those who created him, intentionally.
