Jotaro and DIO have similar stands which implies that something about their souls is similar too. The small differences in their stands also implies the true difference between them.
They're both tough brutes who earned respect by being bad boys in their school years. The difference is that DIO only fought for his own gain whereas Jotaro fought for what's right.
If Jotaro insulted you, you were probably just being annoying. If DIO insulted you, he hates everything about you. At least, that was the case before Jonathan died. He called humans primative in comparison to vampires yet he mourned his brother when he died on that ship. He didn't think of the consequences of his schemes and he lost his best rival for it.
Jotaro knows there's a time and a place. He'll insult you when you're annoying but he'll go across the planet and risk his life when you're in danger. DIO doesn't know when to act. He will start doing and never stop doing what he's doing until someone teaches him that what he's doing isn't working.
The difference between Star Platinum and The World is adaptability. Star Platinum fought without the use of timestop for a long time and yet it was able to come out on top because it was adaptable. It could extend its fingers or inhale lots of air or dig Jotaro into the ground. There was always an adaptation to take for every fight. The World started with timestop and never learned to fight properly. It never learned to adapt. When Star Platinum used timestop, that was an adaptation.
The difference between them is that Jotaro knows that you can't approach every fight the same. DIO thought that he could just stop time and kill all the crusaders. That was his weakness. That's Jotaro's strength.
