Dad requested pancakes for Father's Day breakfast, so he got regular ones while I made some adjustments to my keto pancake recipe. These turned out great! I topped them with some keto zuchinni raspberry jam that my coworker and her husband made. I have found the secret to breaking that weird, dry texture and heaviness that coconut flour tends to have: xanthan gum! These are fluffy and moist.
